WASHINGTON (AP) - Health and Human Services Secretary Tommy Thompson
said that his department was wrong to edit a report about health care
for minorities to downplay serious problems and emphasize
improvements.....
The report found a higher death rate for cancer among blacks and
low-income Americans in its review of the nation's health care system.
It also said those groups are less likely to be screened for certain
cancers and less likely to avail themselves of other preventive
services.

Macular Degeneration and Aging Eyes the Thing of the
Past!
Supplements Shown To Prevent Age-Related Vision Loss
A new study in the Archives of Ophthalmology reports that the use of
antioxidants together with zinc may reduce the risk of developing
Macular Degeneration (AMD) and, therefore, loss of vision.
As part of the Age-Related Eye Disease Study, 3,640 participants between
the ages of 55 and 80 were followed over a six-year period. Each person
had some degree of retinal changes, ranging from mild to severe.
They were divided into groups to receive daily intakes of either...
(1) antioxidants... including 500 mg of vitamin C, 400 IU of vitamin E
and 15 mg of beta-carotene
(2) 80 mg of zinc and 2 mg of copper
(3) antioxidants plus zinc (no copper)
(4) no supplements at all.
Amazing Results...
The researchers found that taking antioxidants reduced the risk of
developing AMD by 17%, and zinc lowered the risk by 21%. An even more
profound decline in risk was found when antioxidants and zinc were taken
together, reducing the risk 25%.
In addition, the combination of antioxidants and zinc led to a 27%
decrease in the risk of having eyesight worsen. Those who had more
severe retinal problems had the largest drop in risk of developing AMD.
Since no conventional treatment currently exists, antioxidant and zinc
supplementation seems worth trying, especially since they appear to be
safe and are relatively inexpensive.
A study from Harvard University found that people whose diets were high
in Lutein and Zeaxanthin had a 57% decrease in the risk of developing
AMD, compared with those who ate little of these substances.
Diets high in Lutein may also protect against the formation of
cataracts. It appears that either eating diet rich in dark green, leafy
vegetables and/or supplementing with antioxidants helps slow the
progression of serious eye disease, as well as other health challengers.

Report Urges Americans to Reduce Sodium

WASHINGTON (AP) - Americans eat more than twice the salt they should but
don't get enough potassium, an imbalance that fuels high blood pressure.
So says a long-awaited nutrition report, released Wednesday by the
Institute of Medicine, that sets the nation's recommended intake levels
of key nutrients.
Heart specialists praised the new salt recommendation while food
manufacturers deemed it unrealistic. Three-quarters of Americans' daily
salt intake comes from sodium hidden in common processed and restaurant
foods, such as frozen dinners and spaghetti sauce.
While factors such as weight and exercise play a role, salt and blood
pressure go hand-in-hand: Eat too much, blood pressure rises. Eat less,
it drops. Some 50 million Americans have high blood pressure - putting
them at risk for heart attacks, strokes and kidney disease - and another
45 million are pre-hypertensive.
Food labels today set daily sodium consumption at 2,400 milligrams, the
equivalent of a heaping teaspoon of salt.
The new recommendation is that most people get just 1,500 milligrams a
day.
Yet women today eat, on average, twice that amount, men even more.
"We don't have our heads in the sand on this one," said Dr. Lawrence
Appel, who co-authored the guidelines for the institute, an independent
scientific organization that advises the government. "We realize where
we are is quite a distance from where we should be ... and there are
commercial interests that don't want this to happen."
"People can cook and prepare Western-style diets that are at that level"
even though "it will take work right now," said Appel, a professor of
medicine at Johns Hopkins University.
Food makers countered that consumers will give up when faced with such
strict levels.
"Dietary recommendations for all Americans need to be realistic," said
Stephanie Childs of the Grocery Manufacturers of America.
The Institute of Medicine report also:
_Lists 2,300 milligrams of sodium as a maximal upper limit for the
average adult's good health, but stresses that eating more than 1,500 is
not recommended for anyone. In fact, because blood pressure rises with
age, it says people over 50 should strive to eat just 1,300 milligrams a
day, and those over 70 just 1,200 milligrams.
_Urges Americans to eat more potassium - 4,700 milligrams a day, roughly
double current consumption. Potassium lowers blood pressure and reduces
the risk of kidney stones and bone loss. It is found in bananas,
spinach, cantaloupe and numerous other fruits and vegetables; food
sources are better than supplements.
_Says consumers shouldn't bother with the old adage "drink at least
eight glasses of water a day." The average healthy person gets plenty of
fluid from a mix of beverages - even those with caffeine - as well as
the water content of fruits and other foods.
For sodium, "These are certainly healthy goals," said Dr. Daniel Jones
of the American Heart Association. "They will be a challenge for
individuals to achieve, but they can be achieved."
The American Public Health Association last year began pushing for the
sodium in processed foods to be halved within 10 years. The new
guidelines mean "the food industry really has to take this issue much
more seriously now," said APHA's Dr. Stephen Havas of the University of
Maryland.
If the new level makes it onto food labels, consumers could see
significant changes. For example, a popular brand of canned clam chowder
that provides 36 percent of daily sodium under today's guidelines would
provide 57 percent of the new level.
The Food and Drug Administration plans to update numerous nutrient
levels on food labels, based in part on Institute of Medicine advice.
But the process will take years, and food makers will oppose a salt
change.
"One size does not fit all when it comes to sodium intake," said Robert
Earl of the National Food Processors Association, who contends the lower
level brings no benefit to healthy people who aren't salt-sensitive.
Suddenly dropping sodium levels would hurt foods' taste, but companies
are hunting for new recipes to provide a gradual decline, said the
grocery manufacturers' Childs. Canned foods today contain 40 percent
less sodium than a few years ago, she said.

Malnutrition Leaves Obesity Time Bomb

LONDON (AP) - A legacy of malnutrition has left the developing world
with an obesity time bomb as new generations increasingly take up an
urban lifestyle, according to research released Wednesday by the United
Nations.
The study by the U.N. Food and Agriculture Organization suggests that
reducing malnutrition in pregnant women could prevent their children
from becoming fat later in life and ease the impending worldwide crisis
in obesity.
The research pulls together growing evidence that suggests hunger during
pregnancy sets up babies to get the most out of the limited nutrition
while they are in the womb by laying down fat and programs them to
expect famine in the outside world.
When they grow up in an environment abundant in food and lacking in
exercise - which is increasingly the case as developing nations urbanize
- their bodies are not as well adapted as those who were well-nourished
as a fetus.
"Many developing countries are currently facing this situation and the
impact on their health situation could be dramatic," the agency's report
said. "Hunger today and more food availability tomorrow will mean that
many will shift from hunger to obesity and become vulnerable to one of
the related ... diseases, such as diabetes and coronary heart disease."
It may take a few generations to break the cycle because girls who were
undernourished in the womb are genetically more susceptible to give
birth to malnourished babies, said Hazel Inskip, an epidemiologist at
the University of Southampton in England who was not connected with the
U.N. report but has conducted research on the topic.
The concept that adult diseases have their origin in fetal and infant
development emerged in 1986 from the University of Southampton, but it
has gained recognition among scientists in the last five years and has
become a hot area of medical research.
Researchers have drawn parallels between low birth weight and later
development of problems such as heart disease, obesity, high blood
pressure and diabetes.
The theory postulates that when a fetus is undernourished, it diverts
resources to areas it needs at the time, such as the brain, at the
expense of organs it will need later in life, such as the lungs.
That may permanently change the baby's structure, functioning and
metabolism, setting it up to be more vulnerable than normal to the
development in adulthood of heart disease and related disorders, the
theory holds.
Diets today are not in line with expert recommendations.
The study found that 36 percent of all countries in the world already
have populations consuming more than the maximum recommended level of
300 milligrams of cholesterol per person per day. In the early 1960s,
only half as many countries were overindulging.
"Likewise, 34 percent of all countries exceed the 30 percent threshold
of fat in the diet, compared to 18 percent 40 years ago," the study
said.
The U.N. food agency predicts the situation will continue to deteriorate
as more than 40 percent of the additional calories consumed in the
future will come from fats.
Falling food prices, rising incomes and rapidly increasing urbanization
in the developing world mean that diets there are approaching the
calorie levels that have for a long time been limited to consumers in
rich developed countries.
"These ongoing changes in nutrition mean that a growing number of
developing countries face the double burden of under- and
over-nutrition," the study said. "The economic problems associated with
nutrition transition will be felt more strongly in developing
countries."
While people in more advanced countries may be able to cope with the
increased costs, the story is very different in developing countries
where many people will not be able to afford medical treatment, the
agency said.

Delaware Chickens Killed Over Bird Flu

DOVER, Del. (AP) - Officials took swift action after a second case of
bird flu was found in Delaware, ordering the slaughter of 72,000
chickens and the quarantine of 80 farms as they tried to avert more
foreign bans on a billion-dollar export industry.
The chickens, from a flock in Sussex County, were killed Tuesday
afternoon, said Delaware Secretary of Agriculture Michael Scuse.
Officials said they ordered the destruction of the birds, being raised
by an independent farm under contract for poultry giant Perdue Farms
Inc., to prevent the spread of the disease.
"This is not a food safety or human health issue, but an animal health
issue. We acted quickly to protect poultry flocks," said Dr. Bruce
Stewart-Brown, vice president of food safety and quality at Perdue, the
No. 1 brand of chickens on the East Coast and fourth in poultry sales
nationally.
Delaware officials say the disease is not related to the virulent
variety of avian influenza that is blamed for the deaths of at least 19
people in Vietnam and Thailand.
The disease was first found on a farm operated by an independent grower
in Kent County. State officials also ordered the slaughter of that
farm's 12,000 birds.
About 80 farms within a six-mile radius of the two farms will be
quarantined for at least 30 days, state officials said. Scuse said
chickens over 21 days old will be tested every 10 days during the
quarantine.
"This now is a very, very serious matter. We have a multibillion-dollar
industry at stake," Scuse said.
Hong Kong announced Wednesday it was expanding its ban on imports of
poultry products from Delaware to the entire United States. Ukraine also
announced Wednesday a temporary ban on imports of Delaware poultry
products.
They join China, Poland, Japan, Malaysia, Singapore and South Korea in
banning U.S. poultry imports. Russia, America's largest poultry export
market, has banned only imports from Delaware.
Annual poultry exports total more than $1.7 billion, about $1.4 billion
of it in shipments of broiler chickens.
If the avian influenza does not spread, the effect of the bans could be
short-lived, said Richard Lobb, a spokesman for the National Chicken
Council, a producers and processors trade group.
But U.S. officials must show the world that they have the disease
properly diagnosed and are eradicating it, Lobb said.
No recalls have been ordered, agriculture officials said. The sale or
the movement of chickens by large poultry companies has not been
stopped, Scuse said.
