ORLANDO, Fla. (Ivanhoe Newswire) -- Unhealthy diets, not enough
exercise, and too much television - it's all leading to an increased
number of children suffering chronic conditions like diabetes and
asthma. The whole country will feel the strain, as the health problems
stretch health care and social welfare systems, according to Harvard
researchers.
While rates of obesity, asthma and attention-deficit hyperactivity
disorder (ADHD) have increased in the last 30 years, James Perrin, M.D.,
of the Center for Child and Adolescent Health Policy, Mass General
Hospital for Children in Boston, told Ivanhoe there are ways to reverse
the trends.
"It seems to us if we're going to try to make some real changes in this,
it's going to have to be prevention," Dr. Perrin said. The most
promising ways to do this are "to change children's diets, improve their
exercise and activities, and to limit their exposure to media,
especially without adult supervision."
After reviewing numerous studies, Dr. Perrin and his colleagues reported
rates of obesity in children and adolescents have more than tripled --
from 5 percent in the 1970s to 18 percent today. Asthma has more than
doubled to nearly 9 percent. Now, nearly 6 percent of school-aged
children have been diagnosed with ADHD, which is nearly double the
previous rate. Overall, nearly 18 percent of children and adolescents in
the United States have some kind of chronic health condition.
Dr. Perrin explained there is a genetic basis for these three
conditions, though genes along cannot account for the increase. Rather,
the societal and environmental changes over the last three decades are
mostly to blame. Children are watching more television and playing more
video games and spending less time playing outside. And the ubiquitous
nature of fast food, junk food and sugary drinks gives harried parents a
fast, albeit unhealthy, way to feed hungry families.
If the current trends continue, Dr. Perrin and his colleagues predict
today's children will be tomorrow's diabetes and heart disease patients.
Additionally, all of the chronic conditions seeing increases can limit a
person's educational and employment success.

Summer Air Travel Virus?
Summer travel for so many means flying and then find that

"What Is It?"
A food not
know to the majority and most look at it and ask, ?What is it?? It's
called Bok choy and classified as a cabbage. Some call it Chinese white
cabbage, yet, bok choy bears little resemblance to the round cabbages
found in your supermarket. With glossy dark-green leaves and thick,
crisp white stalks in a loose head. Some say its white stalks resemble
celery without the stringiness, while the leaves of the most common
variety is similar to Romaine lettuce or spinach.

Although bok choy was introduced to Europe in the 1800's, and is now
readily available in supermarkets throughout North America, other
cuisines have been slow to embrace it. Bok choy is widely popular in the
Philippines, where large numbers of Chinese immigrated following Spain's
conquest of the islands in the 1500's. You'll sometimes find bok choy
replacing cabbage in pancit, a Philippine noodle dish, and in kimchi, a
Korean hot pickle made with garlic and red peppers. Bok choy or pak
kwahng toong also appears in Thai recipes. However, you're unlikely to
see a piece of bok choy enlivening your Greek or Italian salad anytime
in the near future. Ditto for ordering bok choy soups or salads at the
local fast food restaurant. While bok choy is grown in the United States
and several Canadian provinces, it remains firmly associated with
Chinese cooking but bok choy is gaining popularity and that comes from
its light, sweet flavor, crisp texture and nutritional value. The yellow
flowering center is especially prized.
There are more then twenty varieties of bok choy that have been
cultivated in China since ancient times. Bok choy is found in soups,
stir-fries, appetizers, salads, side, and main dishes. The smaller
varieties are valued for their tenderness. An added benefit is that
recipes often call for them to be cooked whole, reducing preparation
time.
Bok choy is nutritious in that it is high in cancer preventing
nutrients. Vitamin A, Vitamin C, potassium and calcium. Leaves are
higher in vitamin content and flavor, than stalks with a really mild
taste, similar to Swiss chard or romaine lettuce. Bok choy is one of
those good-for-you vegetables that can be eaten raw, quick-cooked,
steamed, stir-fried, or boiled. When cooked, bok choy stalks are tender
but crisp.
Shopping for bok choy!
When shopping for bok choy avoid the plants with deformed stalks and
brown spots which indicate poor growing conditions. Yellow leaves and
very small stalks or bunches mean old product. Choose young, tender bok
choy no longer than 4-inches in length. Once harvested, bok choy
deteriorates quickly, so plan to buy and serve it within two to three
days of purchase. When you get it home, wrap the head in a damp paper
towel or an airtight plastic bag and put it in the refrigerator
vegetable bin.
To clean bok choy cut off the tough ends, fill your sink or a large bowl
with cold water, and swish the pieces to dislodge dirt and grit, but
don't soak. If the leaves are especially dirty, change the water once or
twice. Give the greens a final rinse under cold running water, then
drain.

To serve raw, cut the leafy parts off the stalk. Or toss chopped stalks
and leaves into a salad. You can also shred the leaves and turn them
into coleslaw. It will take longer to cook stalks (2-3 minutes) than the
leafy parts- approximately 40 seconds. You can also steam it whole, or
coarsely chop it and add to soups.
Stir-fried Bok Choy with Peanuts Recipe
INGREDIENTS:
4 bunches bok choy (basically, 1 bunch per person)
1/4 cups roasted unsalted peanuts (Cashews are great too)
2 thin slices ginger root
2 tablespoons soy sauce
1/4 teaspoon sea salt, or to taste
1/4 cup chicken style broth
1 1/2 tablespoons Virgin Olive Oil for stir-frying
Wash the bok choy and drain. Separate the stalks and leaves. Cut the
stalk diagonally and cut the leaves across.
Heat wok and add oil. When oil is ready, add ginger and stir-fry
briefly, for about 30 seconds, until the ginger is aromatic. Add the bok
choy, adding the stalks first, and then the leaves. Add peanuts, stir in
the soy sauce, and salt. Stir-fry on high heat for 1 minute.
Add the broth cover the wok and simmer for about 2 minutes. Serves 4.

4th of July Stomach Problem Treatments

This coming week - 4th of July
Celebrations - will find a lot of BBQ's and picnics may end up in a lot
of visits to the doctor a couple of days later or possibly even hours
after the BBQ or picnic? Most of those stomach upsets that cause a visit
to the doctor will be because foods left sitting too long or improper
handling, cooking or refrigeration. Either on will create a building up
bacteria ready to hit your stomach creating cramps, vomiting and/or
diarrhea.
Sometimes it may mean only a small bout with diarrhea and then it's
gone. Others will have severe stomach cramping along with vomiting that
says you've been hit hard but you will live. Others will even have a
fever and/or flu like symptoms and serious consequences to the point of
death in small children and the older folks.
Those enjoyable picnics and BBQ's can end up with horrific stomach
symptoms. With E. coli, being the most common one, causing vomiting,
cramping and severe diarrhea, which can then lead to dehydration that
creates a loss of minerals, which can end up with the heart going into
Atrial Fibrillation from that lack of minerals in the body causing
hospitalization at best and worst case scenario death!
Will that doctor give you a treatment for the problem or treat
symptoms?
One of the most common sources of Ecoli is eating undercooked meat.
Ecoli outbreaks often occur during the summertime when many are enjoying
barbecues, picnics and foods served at public carnivals and festivals.
Antibiotic Treatment by the medical world for Ecoli is risky, not to
forget that it decimates the intestinal system which is already
suffering from the toxins and does not treat the problem. Antibiotics
also opens the body up to catch all other virus or bacteria that a body
comes in contact with for several weeks thereafter simply because it
kills the good and bad bacteria that the body needs to fight invasion of
those germs!
Treatments that I know to work without antibiotics are;
1 -
Minerals balance to keep the heart and other organs functioning
as they should. If the vomiting and diarrhea are really severe you may
need to drop liquid minerals on pieces of fruit or vegetables until the
body can hold food down.
2 - Add
Probiotics to the intestinal track to help take care of the
Ecoli naturally. This addition will overcome and kill the offending
bacteria? Ecoli cannot take hold of your system when a balanced
intestinal ecosystem exists. Better yet, have your intestinal tract so
tuned up that Ecoli can't get access to it.

Desert Dust Cuts
Mountain Snow, May Spur Warming

WASHINGTON
- Desert dust blown onto Rocky Mountain peaks has cut the
duration of snow-cover by a month or more, and the same thing is
probably happening in the Alps and Himalayas, researchers
reported on Monday.
In a phenomenon likely to spur global warming, the
reflective white of snow is replaced by darker dust deposits
that absorb the sun's rays, heating up the lower atmosphere,
said Tom Painter, a scientist at the National Snow and Ice Data
Center in Colorado.
Speaking by telephone from Mont Blanc in Switzerland, Painter
described an orange tinge he had seen on the snow of nearby Dome
de Miage, which he attributed to dust carried from the Sahara in
Africa.
Painter said he had observed dust-laden snow on the Tien Shan
Mountains in China, and the same likely held true for parts of
the Himalayas.
"I don't know of any mountain ranges that are not experiencing
dust deposition," Painter said.
Dust in small doses can help to form snowflakes, but the dust
that cuts the length of snow-pack in the Rockies by about 20 to
35 days a year comes in a swirling blanket, spawned by wind
storms in desert or drought-stricken areas, Painter and his
co-authors wrote online in Geophysical Research Letters.
The fact that dust deposits can melt mountain snow by decreasing
the ability to reflect sunlight has long been established; what
is new, Painter said, is the degree to which this affects snow
cover. One month less of snow "is an enormous change," he said.
The desert dust-mountain snow system warms up the lower
atmosphere in what climate scientists call a positive feedback
loop, Painter explained: "The hotter it gets, the less snow
cover you have ... and that provides a darker surface that can
absorb more solar radiation and that warms things even more."
The cause for the diminished snow cover in Colorado's San Juan
Mountains is dust carried from the Colorado Plateau, some 200
miles (320 km) away, where Colorado, Utah, Arizona and New
Mexico come together in an area known as Four Corners, the
researchers said.
The underlying reason for the increased dust is changes in land
use starting in the mid-19th century, Painter said.
"About 75 percent of the Western United States has been affected
by grazing, by agriculture, by mining," he said. "Generally
these lands were pretty stable prior to the large-scale
introduction of grazing and agriculture."
Without natural grasses to stabilize the soil, more of it turned
to desert and more dust blew into the mountains.
Most climate models predict more drying and warming in the US
desert Southwest, causing soil moisture to decrease, which means
less vegetation to stabilize the soil and probably more dust
emission, Painter said.
This, in turn, could mean even more intense snow melt, earlier
in the year, spurring the whole cycle, he said.
