As the smoke clears a bit from our area, indicating that fires are lessoning due to the moisture coming into the area the last three days and I am hoping it continues. The heat is even a bit less, still record breaking but under 100 yesterday and hoping today will continue that downward trend... Weather is like an entrepreneurs life. Good one day and not so good the next... or better the next day... You just never know but I can say this summer has not seen a lessoning of business, which either means people are much too ill or news is spreading.

Some of the medications for treatment of hypothyroidism are impacted by soy but this does NOT mean you cannot have soy in your diet. You just need to follow the instructions for taking the medication. For example, it is suggested that a popular thyroid medication, Synthroid, be taken on an empty stomach (approximately 30 minutes to one hour before breakfast). That is because many things, including soy, iron, calcium, walnuts and dietary fiber may interfere with absorption.

My mother would tell me the story; when I was 18 months old I ate a half can of lye, that she was using to make soap. This ate the lining of my esophagus and left my upper passages looking like a web that spiders had built, according to the doctor who read my esophagram a few years ago. But shortly after that incident while my throat was still very raw my mother said she would find me sitting in the garden eating ripe tomatoes and crying from the pain, but she was unable to convince me that I should not eat them. Tomatoes continue to be one of my favorite foods into this ripe old-age of 68! I now know that they are very good for me and you!

Tomatoes generally range in size from three-quarters of an inch in diameter and a quarter of an ounce in weight to six inches in diameter and two pounds. Tomatoes range in hue from white to red to purple, green yellow and orange. Generally, the lighter colored tomatoes have a milder taste. The red colored tomatoes get their red pigment due to the lycopene content. More on lycopene later on…

If you're like most people, you think tomatoes are vegetable. If you talk to a botanist, he or she might insist that the tomato is a fruit because it contains seeds with sweet pulp. However, a horticulturist would argue that the tomato plant is a vegetable plant and not like fruits that are grown on trees (eg. apple, peach, pear, etc.). Both arguments are valid, and in a way, the answer is most likely tomatoes are both a fruit and a vegetable.

Tomatoes are the second most consumed vegetable in North America. The tomato is a treasure of nutrients, including Vitamin C, Vitamin A, potassium, folic acid and more. Processed tomatoes have higher levels of the nutrients simply because it is concentrated. North Americans customarily eat a large volume of tomatoes and tomato products that it ranks as No.1 among fruits and vegetables in the total amount of nutrients they contribute to the diet.

Interestingly, second to oranges, tomatoes contribute a high amount of Vitamin C in North American diets. Vitamin C has long been known to prevent scurvy - a condition that is characterized by bleeding gums and soreness in the joints. Vitamin C is also known to function as an antioxidant in the human body. Studies have shown that it may prevent certain degenerative diseases and common colds.

In addition, tomato consumption is listed as the fourth most important source of vitamin A. In the body, vitamin A is converted from sources beta-carotene and it is important for immune functions, maintenance of the skin and tissue lining and vision.

Potassium is an essential nutrient that is important for normal health maintenance and growth. It is required for movement of nutrients across the cells in the body. A deficiency of potassium will lead to muscle weakness, causing heart palpitations, heart attack or heart disease, apathy, cramps and more. It is important for athletes to maintain levels of potassium which is lost through sweating during an event. Potassium levels can be easily maintained before or after the event by eating foods or drinking fluids high in potassium.

Tomatoes were first thought to be poison and were not to be eaten but that idea lost it's wind and then became the food of necessity.

The tomato originated in the Andes Mountains in South America and was first domesticated in Mexico by the Aztec people. After the Spanish conquered Mexico in the early 1500s, they introduced it to southern Europe, where it quickly became popular. The Italians named it "poma amoris" meaning "apple of love". Similarly, the French also called it "pomme d'amour". This name gave rise to the legend that the tomato was an aphrodisiac. However, in colder climates, such as Canada, Great Britain and parts of the United States, it was called the "wolf peach". This unappealing name reflected its poor reputation and people's beliefs that tomatoes were poisonous. Therefore, for many years, the tomato plant was only grown for decorative purposes.

The most talked about food nutrient known, at this time in the tomato, is Lycopene and being studied for further health benefits. In addition to giving tomatoes their vibrant color, lycopene appears to protect against diseases such as cancer and heart disease.

Lycopene is an “antioxidant” - it helps to counteract the harmful effects of substances called “free radicals,” which are thought to contribute to many chronic diseases and age-related processes in the body.

The researchers surveyed the eating habits of over 47,000 men between the ages of 40-75 for six years and found that the consumption of tomatoes, tomato sauce, tomato juice and pizza was associated with a reduced risk for developing prostate cancer. Researchers theorize that lycopene, an antioxidant nutrient found in large amounts in tomatoes, may be responsible for this possible protective effect.

I serve up hug plates of sliced fresh tomatoes with sliced cucumbers splashed with a bit of rice vinegar, salt and pepper and the family loves it. My dh grows our own organic tomatoes with which I make our ketchup, tomato sauce and canned fresh tomatoes to go with us through the winter. Try a small patch, as tomatoes are easily grown in your flower bed!

Tomato season is coming into full swing here, if that is the case in your area go out and get some great organically grown tomatoes for maximum health and nutrient content.

Cholesterol Drugs May Harm Ill Diabetics

Cholesterol-lowering statin drugs do not help severely ill diabetics, and may even raise their risk of a deadly stroke, a study found. In the study, patients on Lipitor were twice as likely to die of a stroke.

It was the first major test of statins in diabetics who need dialysis machines to remove wastes from their bloodstream because their kidneys cannot do the job. The results are surprising because previous research showed Lipitor helped less severely ill diabetics.

Dr. Robert Stanton, who is chief of kidney diseases at Joslin Diabetes Center in Boston and was not involved in the study, said it may be too late to start diabetics on statins once their kidneys have failed.

The study was funded by Lipitor's maker, Pfizer Inc. (PFE), and involved 1,255 Europeans with Type 2 diabetes, in which the body cannot properly use insulin. The findings were reported in Thursday's New England Journal of Medicine.

More than 120,000 Americans are on dialysis because of diabetes, and they have higher risks of heart disease, stroke and deaths than the general population and other diabetics. Lipitor is the world's most-prescribed medication. It and other statins have dramatically lowered such risks by reducing levels of LDL, or "bad" cholesterol.

The study, led by Dr. Christoph Wanner at the University of Wurzburg, Germany, tested a relatively low dose of Lipitor - 20 milligrams a day - against dummy pills and found virtually no difference four years later in participants' combined risk of heart attacks, strokes and death.

This happened even though the drug reduced LDL levels to an average of 72 milligrams per deciliter of blood, close to the target of 70 that new federal cholesterol guidelines recommend for people at very high risk of heart disease.

There were 27 fatal strokes among the 619 people on Lipitor versus 13 among the 636 in the placebo group, a result the authors said was unexplained and could be just a chance finding, considering that previous research showed a benefit from the drug.

"It's definitely a concern, but I don't know from a single study that you can say for sure you shouldn't use it in this population. It certainly raises your alarm levels," Stanton said.

Toxic Mementos Left Behind in Arctic

The Arctic may be devoid of industry and agriculture, but it is slowly turning into a pollutant dump just the same. The phenomenon is known as the grasshopper effect, because the contaminants - including persistent organic compounds like PCB's and DDT - tend to evaporate in the more temperate zones where they are produced, migrate on air currents and condense in the colder polar region.

But the distribution of these contaminants in the Arctic is not uniform. "Some places have a lot and others a little," Dr. Blais said.

He and colleagues have now provided an explanation: seabirds, they write in the journal Science, can concentrate the contaminants in a small area.

The researchers studied the effects of a colony of northern fulmars on Devon Island in the Canadian Arctic. About 20,000 of the birds live along 800-foot cliffs, above a series of ponds. The birds eat fish, squid and other food from the ocean, and their wastes are washed down the cliffs into the ponds.

All the nutrients in the wastes make the nearer ponds teem with life - mosses, insects, even small birds - in what is otherwise a bleak landscape. The seabirds, Dr. Blais said, "support an entire ecosystem below where they are nesting." But analyses of pond sediment show that the seabirds are also passing on DDT, mercury and other contaminants. Ponds closer to the nests had more of the toxins.

The birds are eating relatively high on the food chain, Dr. Blais said. "The things they are eating have bioconcentrated the chemicals," he said. "Essentially, the birds are funneling a large mass of marine carnivores like fish and squid into small areas where they are nesting."

Dr. Blais said that the fulmar colony was fairly typical of seabird colonies in the Arctic, so it is likely that there are many other areas with concentrations of contaminants. "The concern is that this contamination is happening precisely in areas that are focal points for biological activity in the Arctic," he said.
