Greetings and thank you for subscribing!
At the request of a reader you will notice a slight change in the font
of the ezines. I hope it meets with your satisfaction....
Mid week already! Time seems to fly
and I never seem to be totally caught up with all that I would like to
do. I seem to get the "must dos" done but then there are things I want
to do that don't always get done as soon as I would like... Summer is
hectic around here with grandkids, garden and beautiful weather saying;
"Come out and play" so I find not enough hours in the day. I also find
that it takes more to keep healthy with the hectic life style and have
to watch my diet to make sure I am giving my body what it needs. Thank
God for Dr. Garland's herbal formulas and minerals or I would be lacking
a lot... Can you say the same? Have a great day...

Is
Your Medicine Cabinet Making You Fat?

Like many people with Type 2 diabetes, Sheila Israel struggles to lose -
or at least not gain - weight. Extra pounds can worsen the insulin
resistance that characterizes her illness.
So two years ago it was discouraging for Ms. Israel to learn from her
new doctor that two of the drugs she had been taking to treat her
problem were actually causing her to put on weight.
One was a thiazolidinedione, also known as a TZD, which increases the
body's sensitivity to insulin.
The other was a sulfonylurea, which works by causing the pancreas to
release more insulin.
Over the course of five years, Ms. Israel, who is 58, had put on 70
pounds.
The physician, Dr. Louis J. Aronne, a weight specialist at Weill Medical
College of Cornell University, gradually took Ms. Israel off both drugs
and put her instead on metformin, sold as Glucophage, a diabetes
medication not associated with weight gain.
Right away, Ms. Israel said, she noticed she was eating less. "I really
wasn't as hungry at all," she said. "I got full very fast."
Over the course of a year, Ms. Israel lost the 70 pounds, and she has
kept it off for another year.
Dr. Aronne is one of many physicians paying increasing attention to the
weight side effects of the drugs they prescribe.
Not only diabetes drugs but also certain psychiatric medications, some
blood pressure treatments, corticosteroids (taken by people with severe
allergies, asthma or arthritis) and even over-the-counter antihistamines
can cause the patients who take them to gain weight.
People who gain weight during the time they are taking a new medication
should consult their doctors about the possibility of switching drugs or
taking other steps to resist further weight gain.
Until recently, many physicians considered a drug's weight side effect
to be a necessary evil, said Dr. Michael D. Jensen, an endocrinologist
at the Mayo Clinic in Rochester, Minn., or assumed that only weight
gains of 100 pounds or more were worrisome. But drugs that lead people
to put on just 10 or 20 pounds a year, if taken for many years, can add
up to big problems over time.
"Gaining weight is a one-way trip for a lot of people," Dr. Aronne said.
"It is often very difficult to reverse."
Zyprexa, Risperdal and other drugs for psychosis can cause particularly
drastic weight gains.
"I have seen patients gain 100 pounds over the course of 9 to 12 months
- people who started out a completely normal weight," Dr. Jensen said.
The drugs are prescribed for patients with illnesses like schizophrenia,
bipolar disorder and severe depression that is resistant to other
treatments.
Growing concern about weight side effects from antipsychotics prompted a
joint panel of American Psychiatric Association, the American Diabetes
Association and other medical groups to issue a consensus statement last
year urging doctors to monitor weight in patients who are taking them,
and to consider switching medications for patients whose body weight
increased by 5 percent or more.
If no alternative drugs are appropriate, Dr. Jensen sometimes suggests
that the patient also be prescribed the anticonvulsant drug topiramate,
sold as Topamax, which can also act as a mood stabilizer.
Topiramate, which can have other side effects, has been associated with
weight loss in some people. "There have been reports of people losing 10
percent of their body weight on topiramate," Dr. Jensen said.
Another option is to prescribe drugs specifically designed for weight
loss, like Xenical, which blocks the digestion of some fat, and Meridia,
which suppresses appetite. But these are often inadequate, Dr. Jensen
said.
Antidepressants like Prozac and Paxil taken over months or years can
also cause some people to gain a few extra pounds. "Some of them cause
weight loss temporarily, but they all can lead to weight gain after a
long period of time," Dr. Aronne said. "The problem is, we don't have
good alternatives."
Drugs taken to control blood pressure, like beta blockers and calcium
channel blockers, do not necessarily encourage weight gain, Dr. Jensen
said, but they seem to make it harder for some patients to lose weight.
Antihistamines, which people usually take on their own to control
allergic reactions or to help themselves get to sleep, can promote
weight gain, too. This occurs only in a minority of people who take the
drugs, said Dr. Linda B. Ford, director of the Asthma and Allergy Center
in Omaha.
It is not known exactly how drugs cause weight gain. Antihistamines may
increase hunger because histamine receptors are thought to play a role
in appetite. The antipsychotics seem to increase appetite, too.
"Patients don't complain of being ravenously hungry, but if you watch
them, they're just eating a lot," Dr. Jensen said.
Recent research suggests that TZD's may work in part by keeping fat
cells from releasing free fatty acids into the blood stream, where they
can impair insulin function, said Dr. Mitchell Lazar, an endocrinologist
who is the director of the Institute for Diabetes, Obesity and
Metabolism at the University of Pennsylvania.
That would explain how the drugs can improve insulin function even as
the patient gains fat.
That means that TZD-induced weight gain may not necessarily worsen a
patient's diabetes. But for some patients that may be little
consolation.
"I've been overweight my entire life," Ms. Israel said. "The last thing
I needed was to gain more."

But the remedies most
conventional doctors offer you come with some serious side

CUT BACK ON SATURATED FAT AND

A high-fat diet may contribute to the
development of skin cancer, according to researchers at Baylor College
of Medicine in Houston, Texas. In a two-year study of 76 skin cancer
patients, half followed their usual diet (about 40% fat) while half
adopted a low-fat diet (20% fat). In the months that followed,
researchers found that low-fat dieters developed an average of only
three new precancerous lesions (called actinic keratoses), while
high-fat dieters developed an average of 10. To cut back on saturated
fat in your diet, eat more fish instead of red meat, and remove the skin
from poultry.
According to Nancy Appleton, PhD, nutritional consultant and author of
Lick the Sugar Habit (Avery), the problem is not so much in fatty foods
but in how they are prepared. She says that the real culprits are
acrylamides -- the carcinogenic chemical by-products of cooking
carbohydrates at high temperatures. Frying, barbecuing, baking and
smoking foods leads to the formation of acrylamides. Over-processed
foods, such as french fries and chips, are also high in these
carcinogens and should be eaten very sparingly if at all. It's easy to
cut back on acrylamides by poaching rather than grilling fish and by
eating boiled potatoes instead of fried.

Tis The Season!
This week is no different as my husband brought in a
fresh off-the-plant purple-black eggplant to be turned into a delectable
food. One of his favorite things.
The purple nutrient rich Eggplant, hated by so many yet loved by a lot
also. I usually hear from people we offer fresh eggplant to; "I don't
like eggplant because they are bitter." Well if they are not fresh that
is the case but fresh off the plant they are not at all bitter and so
different.
A member of the nightshade family, eggplant counts tomatoes, potatoes
and peppers as cousins.
The Spaniards of the 16th century called eggplants berengenas, or
"apples of love," while some of the botanists of northern Europe of the
same period called the species Mala insana, or "mad apple," because they
thought that eating it would make a person insane. Equally unfounded was
the idea in medieval Europe that it had remarkable properties as a love
potion. The history behind the eggplant is long and surprising to many,

Some will tell you that an eggplant is low in nutrients but I beg to
differ. The following Minerals are found in them; Calcium, Iron,
Magnesium, Phosphorus, Potassium, Sodium, Zinc, Copper, Manganese and
Selenium and vitamins haven't been left out either, they include;
Vitamin C, A, B-6, E, B-12, DFE, Riboflavin, Niacin, Pantothenic acid,
Folate and Retinol. I would not call that low in nutrients?
Eggplant comes in several varieties.
Most often found in stores and gardens are the Large Oval eggplant with
various names such as; Dusky, Epic (tear-drop shaped), Black Bell (round
to oval, productive), Black Magic, Classic (elongated oval, high
quality), Black Beauty, Burpee Hybrid, Ghostbuster 9white, slightly
sweeter than purple types oval). Oval Santorini (Whimsical in nature,
white in color, this particular 'fruit' needs no watering. Sweet to
taste, juicy and quite delicious, this eggplant is beloved by chefs
since it does not absorb oil. Lovers of good cuisine should be aware
that only in Santorini can one sample this unique delicacy.)
Then there are thinner elongated types; Ichiban, Slim Jim,lavender,
(turning purple when very small as a peanut) Little Fingers (6 to 8
inch).

With a third type and usually looked at as edible ornamental eggplant
called the Easter Egg (small white, egg-sized, shaped, turning yellow at
maturity).
The nutrients vary slightly from one type to the other but all quite
nutritious and healthy!
Eggplant stores poorly and prefers a temperature of 50 degrees, and
therefore doesn't keep very well at room temperature or in the
refrigerator. So growing your own is the smart move to assure freshness
or if you purchase at the store should be used within the next 48 to 72
hours.
Here is a great Greek Style Eggplant dish that most love!
Stuffed Eggplant Greek Style
INGREDIENTS:
4 large eggplants
1/2 cup olive oil
Coarse kosher salt and freshly-ground black pepper
4 onions, chopped medium
6 garlic cloves, chopped
1 28-ounce can whole, peeled tomatoes
1/4 cup parsley
2 tablespoons basil
1/2 teaspoon cinnamon
2 tablespoons red wine vinegar
2 pounds ground lamb
1/2 cup white wine
1/2 teaspoon cumin powder
4 tablespoons butter, plus extra for baking
4 tablespoons flour
2 cups scalded milk
4 eggs
10 tablespoons bread crumbs
1 cup crumbled feta cheese
PREPARATION:
·Prick
eggplants several times with a fork. On a large baking sheet, roast
eggplants in 400 degree oven until soft, 35 to 45 minutes, turning
frequently to prevent charring. Cool and slice eggplants lengthwise into
1/2-inch pieces. In a saute pan heat 1/4 cup olive oil and brown
eggplant slices, 1 to 2 minutes per side.
Drain on paper towels and sprinkle with kosher salt.
SAUCE:
· In a
saucepan heat 1 tablespoon olive oil over medium heat, add 1 chopped
onion and 2 chopped garlic cloves and saute until tender. Add tomatoes
and their liquid. squeeze the tomatoes in your hands into broken into
coarse chunks. Add parsley, pepper, basil, cumin, cinnamon and vinegar.
Bring the sauce to a boil, then reduce to a simmer and cook, uncovered,
until sauce becomes thick, about 20-30 minutes.
Yield: 3 1/2 cups sauce.
PREPARATION FOR THE LAMB FILLING:
· Heat 1
tablespoon of olive oil with onions and garlic over medium-high heat;
saute until tender, 5 minutes.
·Add lamb and brown well, breaking
up pieces with a wooden spatula until the pieces are no larger than 1/4
inch.
·Add wine, bring to a boil and cook
until wine has reduced almost completely.
·Season meat with salt, pepper and
nutmeg and stir in 1/2 cup tomato sauce. Bring to a boil, reduce heat
and simmer 1 hour.
BECHAMEL SAUCE:
·In a saucepan
melt butter over medium-low heat and gradually whisk in flour to make a
roux.
Cook 1 minute, whisking constantly, but do not let the roux get brown.
Slowly whisk in warm milk. Bring bechamel sauce to a slow boil, whisking
constantly,
then reduce heat to barely simmering and cook 20 - 25 minutes until
smooth and thickened.
Remember to stir occasionally so as not to let the sauce stick. Season
with salt, pepper and nutmeg. Let cool slightly.
·In a bowl whisk the eggs and then
whisk in spoonful of sauce to warm the eggs so they will not scramble.
Slowly whisk in the remaining sauce and adjust seasoning to taste, if
needed.
FINAL ASSEMBLY:
·Preheat
oven to 350 degrees. In a large baking dish or lasagna pan
(18x8x3-inches) sprinkle 2 tablespoons bread crumbs in bottom and cover
evenly with half of eggplant. Drain as much oil from meat mixture as
possible (can squeeze meat in a paper towel) and spread over eggplant;
top with half of the feta cheese, then with half of remaining bread
crumbs. Layer remaining eggplant, then bechamel sauce, remaining feta
cheese and remaining bread crumbs in even layers.
Dot top generously with butter. Bake 45 minutes until bubbly and top is
well-browned. If necessary, brown top briefly under a preheated broiler.
Cool slightly and cut into 3-inch squares to serve.
Serve with extra tomato sauce, if desired.
Serves 12

More Than Half the U.S. Population
is Sensitive to One or More Allergens
More than fifty percent of the U.S. population tested positive to one or
more allergens, according to a large national study. The new findings,
based on data from the third National Health and Nutrition Examination
Survey (NHANES III), shows that 54.3% of individuals aged 6-59 years old
had a positive skin test response to at least one of the 10 allergens
tested. The highest prevalence rates were for dust mite, rye, ragweed,
and cockroach, with about 25% of the population testing positive to each
allergen. Peanut allergy was the least common, with 9% of the population
reacting positively to that food allergen.
The new findings published in the August issue of the Journal of Allergy
and Clinical Immunology were conducted by researchers at the National
Institute of Environmental Health Sciences (NIEHS) and the National
Institute of Allergy and Infectious Diseases, both components of the
National Institutes of Health.
A positive skin test result may mean the individual is more vulnerable
to asthma, hay fever, and eczema. "Asthma is one of the world's most
significant chronic health conditions," said David A. Schwartz, MD, the
NIEHS Director. "Understanding what may account for the rising worldwide
asthma rates will allow us to develop more effective prevention and
treatment approaches."
NHANES III is a nationally representative survey conducted by the
Centers for Disease Control and Prevention between 1988-1994 to
determine the health and nutritional status of the U.S. population.
Approximately 10,500 individuals participated in the skin testing.
During these tests, skin was exposed to allergy-causing substances
(allergens) and a positive test was determined by the size of the
reaction on the skin. The 10 allergens tested include: Dust mite, german
cockroach, cat, perennial rye, short ragweed, Bermuda grass, Russian
thistle, White oak, Alternia alternata, and peanuts.
Researchers also compared skin test responses between NHANES III and the
previous survey, NHANES II, conducted from 1976-1980. The prevalence of
a positive skin test response was much higher in NHANES III than in
NHANES II.
According to the lead author, Samuel J. Arbes, Ph.D. of NIEHS, "An
increase in prevalence is consistent with reports from other countries
and coincides with an increase in asthma cases during that time." In the
U.S., the prevalence of asthma increased 73.9% from 1980 to 1996.
However, Dr. Arbes was quick to point out that differences in skin test
procedures between the two surveys prevent the authors from definitively
concluding that the prevalence of skin test positivity has increased in
the U.S. population.
"There is still much we don't understand about why some people become
sensitized to allergens and others do not,? said Darryl C. Zeldin, MD,
senior author on the paper. ?Much more research is needed in order for
us to understand the complex relationships between exposures to
allergens, the development of allergic sensitization, and the onset and
exacerbation of allergic diseases such as asthma."
The researchers recently added an allergy component to NHANES 2005-2006.
In addition to the other NHANES data collection components, dust samples
from the homes of 10,000 individuals are being analyzed for allergens,
and blood samples taken from these individuals are being examined for
antibodies to those allergens. This new NHANES 2005-2006 allergy
component will allow researchers to gain a greater understanding of
asthma and the roles that indoor allergens play in asthma and other
allergic diseases.
NIEHS, a component of the National Institutes of Health, supports
research to understand the effects of the environment on human health.
NIAID supports basic and applied research to prevent, diagnose and treat
infectious diseases such as HIV/AIDS and other sexually transmitted
infections, influenza, tuberculosis, malaria and illness from potential
agents of bioterrorism. NIAID also supports research on transplantation
and immune-related illnesses, including autoimmune disorders, asthma and

U.S. Coral Reef Ecosystems in
Decline

WASHINGTON (AP) - Coral reef ecosystems, among the oldest and most
diverse forms of life, are declining in U.S. waters because of
overfishing, climate change, marine diseases, land-based pollution,
storms and grounded ships.
Such ecosystems "clearly are beset by a wide array of significant
threats," the National Oceanic and Atmospheric Administration said in a
report Thursday.
About three-quarters of all the threats to coral reefs have not changed
since the agency's last overview three years ago. Nearly half of those
are considered medium to high threats.
Only in one place, Guam, did a threat level go from low to high, because
of coral bleaching from rising ocean temperatures.
Coral reefs provide food and shelter to fish and protect shores from
erosion.
The 522-page report says many of the programs that scientists use to
monitor coral reefs only began in the past two to five years, so some of
the data is inconclusive.
But the agency's head, Conrad Lautenbacher, said the findings offer "a
baseline we can use to compare future results."
The data comes from more than 160 scientists and coral reef managers who
have monitored the water quality, the sea floor and fish and other
species that live in coral. They also have expanded their digital
mapping of shallow water coral reef ecosystems.
Globally, only about 30 percent of the world's coral reefs are healthy,
according to a study last year by 240 scientists in 96 countries. That
