Zero Trans Fat
Doesn't Always Mean Zero

NEW YORK (AP) - Stroll the aisles of any grocery store and you're sure
to spot labels declaring "zero grams trans fat" on the front of snack
foods, cookies and crackers. But does zero really mean there's NO
artery-clogging fat inside? Maybe, maybe not.
Federal regulations allow food labels to say there's zero grams of trans
fat as long as there's less than half a gram per serving. And many
packages contain more than what's considered one serving.
"The problem is that often people eat a lot more than one serving," said
Dr. Dariush Mozaffarian of Harvard School of Public Health. "In fact,
many people eat two to three servings at a time."
Those small amounts of trans fat can add up, said Michael Jacobson of
the consumer advocacy Center for Science in the Public Interest. To find
out if there might be some trans fat, he said shoppers can check the
list of ingredients to see if partially hydrogenated oil - the primary
source of trans fat - is included.
"When it says zero grams, that means something different from no trans
fat," said Jacobson. His group has urged the government to bar food
producers from using any partially hydrogenated oils at all.
The Food and Drug Administration began forcing food companies to list
the amount of trans fat on nutrition labels of packaged foods in January
2006. That led many companies to switch to alternative fats.
Trans fat occurs naturally in some dairy and meat products, but the main
source is partially hydrogenated oils, formed when hydrogen is added to
liquid vegetable oils to harden them.
Consumer groups and health officials have campaigned to get rid of trans
fat because it contributes to heart disease by raising levels of LDL or
bad cholesterol while lowering HDL or good cholesterol. Fast-food
restaurants are switching to trans fat-free oils and New York City and
Philadelphia are forcing restaurants to phase out their use of trans
fat.
The American Heart Association recommends that people limit trans fats
to less than 2 grams per day.
Julie Moss of the FDA's Office of Nutrition, Labeling and Dietary
Supplements, said the half-gram threshold for labeling was adopted
because it is difficult to measure trans fat at low levels and the same
half-gram limit is used for listing saturated fat. She said the FDA
would soon be doing consumer research on trans fat labeling, including
whether a footnote such as "Keep your intake of trans fat as low as
possible" should be added to food labels.
Robert Earl of the Grocery Manufacturers Association said any trans fat
in products labeled zero trans fat is likely to be far less than the
half-gram threshold. For example, he said, a little partially
hydrogenated oil might be used to help seasoning stick.
"I think the industry has been extremely responsive. Most of them were
ahead of the curve to either remove or reduce trans fat in most food
products," he said.
Earl said shoppers should be looking at the entire food label.
Jacobson is also concerned that people are focusing too much on the
trans fat content alone, and not considering other ingredients such as
saturated fat, which also raises the risk of heart disease.
"The bigger problem is foods that have no labels at all," Mozaffarian
said, citing food served not only at restaurants, but at bakeries,
cafeterias and schools.
New York resident Diana Fiorini said she's just recently started paying
attention to labels. Holding a box of microwave popcorn at a Manhattan
store, she scanned the label and was happy to see that it listed zero
grams trans fat.
"I look at the labels. It's still hard to stop yourself when you know
you should," she said.

Healing Stomach Problems Naturally
One of the most common complaints heard all day long in the
doctor's office was a problem with digestion, constipation or diarrhea, excess
gas and/or stomach pain! Sadly a prescription was given but the problem didn't
go away? Why?
We don't digest food for many known reasons. Nearly 100% of the enzymes and
nutrients naturally present in food have been lost. Diets do not contain the raw
foods as they once did, and modern food processing techniques as well as cooking
that destroys enzymes. Additives to our foods create a health risk as well as
stomach and/or intestinal problems. Even raw foods don't contain as many healthy

My husband's
favorite snack food:
These little marble-like fruits are a veritable of
health and nutrition, easy to eat, no cooking required as well as very
tasty. Grapes!
As a child, this time of the year we would spend a day or more in the
Oklahoma woods - climbing trees that these delectable vines choose as
their clinging/climbing post - picking wild grapes that was then made
into pies, jam, jellies and preserves by
my mother and grandmother. I almost always ended up with poison oak or poison Ivy over
my body, as the trees that wild grapes grow on tend to harbor those
bits of painful culprits as well, but the suffering was well worth the harvest!
Thousands of grape varieties have been developed, with 5,000 reported
for V. vinifera alone, they differ in such characteristics as color,
size, shape and flavor.
High in Fiber with lots of great Minerals, Calcium, Iron, Magnesium,
Phosphorus, Potassium, Sodium, Zinc, Copper, Manganese. Also Vitamins
A, B-12, B-6, C, Thiamin, Riboflavin, Niacin, Pantothenic acid, Folate,

Resveratrol is one of a group of compounds, called phytoalexins, that
has been identified grapes and found in the skin, not flesh, of grapes.
A study by Pezzuto and colleagues are finding that Resveratrol is
effective during all three phases of the cancer process: initiation,
promotion and progression. Resveratrol was found to have antioxidant and
antimutagenic activity and also increased levels of the phase II
drug-metabolizing enzyme quinone reductase, an enzyme capable of
metabolically detoxifying carcinogens, thereby ridding them from the
body. Resveratrol is found mostly in red or black grapes.
Dr. John Folts M.D., at the University of Wisconsin Medical School, has
been focusing on the connection between grapes and heart disease. His
research has suggested that grapes may have a more protective
anti-clotting effect than aspirin - the figures showed that aspirin and
red wine both had anti-clotting activity of 45%, but then went on to
show a whopping 75% effect from ordinary grape juice!
History of Grapes
Details of grape growing figure in the mosaics of the Fourth Dynasty of
Egypt (2440 B.C.) and earlier. From Asia Minor, the culture of grapes
spread both east and west. Before 600 B.C., the Phoenicians probably
carried wine varieties to Greece, thence to Rome and on to southern
France. Early written accounts of grapes and wine production are found
in the writings of Virgil, Cato, the Plinys, and columella. Virgil
describes 15 varieties while Pliiny gives even fuller descriptions of 91
varieties and distinguishes 50 kinds of wine. No later than the 2nd
century A.D., the Romans took the vine to Germany. Some believe the vine
was introduced into England by the Romans, while others believe it was
first brought by the Phoenicians. The earliest English chronicle make
mention of vineyards and vine culture. Many years later when Europeans
colonized new lands, the grape was always among the plants taken along.
The first European visitors to North America, the Norsemen, found native
grapes so abundant they called the country Vinland. The first English
settlers in Virginia found huge quantities of grape vines along the
streams, climbing on the trees. However, the fruit was poor compared to
the cultivated European grapes.
Three men heavily influenced the history of grapes in America: William
Wolfskill, Agoston Haraszthy, and William Thompson. In 1839, William
Wolfskill, a former trapper from Kentucky, planted the first vineyard of
table grapes in California, near what today is Los Angeles. He was the
first person to ship grapes to Northern California gold miners.
Agoston Haraszthy was an immigrant from Hungary who is often referred to
as the father of California viticulture. In the mid1800's, Haraszthy
brought one hundred thousand vine cuttings from Europe to California.
Unlike Wolfskill, his interest was in wine, so these vine cuttings were
for three hundred varieties of wine grapes. In addition to planting them
at his own winery, Buena Vista, he sold his imported vine cuttings to
growers around the state.
Choosing grapes
Grapes are harvested only when fully ripe so they should always be ready
to eat when you buy them. Use color as a guide to the sweetness of the
fruit. Green grapes should have a yellow cast or straw color with a
touch of amber, when fully ripe, not an opaque grassy green color. Red
grapes should be a deep crimson, not a milky or pale red. Blue grapes
should be darkly hued, almost black, not pale or tinged with green.
Grapes should be plump, so avoid any that have lots of underdeveloped,
very green fruit. You can always judge the freshness of grapes by the
stem. The greener the stem, the fresher the grapes. Grapes should always
be firmly attached to their stems. Before storing, remove any spoiled
grapes with broken skins or browning from the bunch and keep
refrigerated; they should keep a week to ten days. During storage,
continue to remove any and all spoiled fruit. Grapes can also be frozen
and make a great healthy treat for anyone.
Frozen treat instructions;
Put Red Flame or other seedless grapes on a tray or cake pan in the
freezer. When frozen, separate them, put them in a resealable plastic
bag and return then to the freezer. Then kids can have sweet, frozen
snacks anytime.

Is Your
Computer Killing You?

It's 3:00 p.m., your shoulders are beginning to cramp, the lower
back pain has moved into your right leg, a drummer is playing
bongos over your left eye and it's only Wednesday.
You're not really sure if your visits to the specialists have
helped. The internist gave you anti-inflammatories, but now
your stomach hurts. You heard there's a new supplement that's
suppose to help?is that MSM, chondroitin sulphate or ginkgo
biloba? You can't remember, maybe there's another pill for
that.
If this sounds familiar you're not alone. According to the U.S.
Department of Labor and Statistics, repetitive motions such as
typing resulted in the longest absences from work. Those with
carpal tunnel syndrome missed more work than did those with any
other condition?including amputation! Because we are doing more
of the same repetitive motions and holding the crooked postures
longer, repetitive stress injuries have become a serious and
disabling epidemic. It costs the country billions of dollars
and has ended many careers. Our office will very effectively
treat the injured area but some changes in your work design may
be necessary. Often, the corrections cost less than $100 and
can be made in an hour. It may be the best investment that
you've ever made.
1. Have the top of your monitor at eye level directly in front
of you. Do this with a monitor holder or by placing a phonebook
or two underneath it. Be sure the screen is close enough so
that you don't have to bend forward to see it clearly.
2. Adjust the height of your chair so that your feet are on the
ground (if necessary buy a foot rest or use a box). Your back
should rest against the seat back and your knees should be level
or slightly lower than your hips. The seat back must be able to
tilt back, lock and be stable and the seat bottom should not be
excessively deep or soft. If you have a lower back disc
problem, a seat bottom that tilts slightly downward in front may
help.
3. The low back support should fit into the curve of your lower
back. A $30 lumbar cushion or even a pillow may be all that's
necessary to do the trick.
4. Adjust the armrests so that with your elbows at 90 degrees
and your shoulders completely relaxed and dropped, your forearms
rest comfortably upon them. If the armrests are too far apart
(forcing your arms away from your body), adjust or try to
"squeeze" them together.
5. Rest against the back of your chair. If you find that you
lean forward or twist, then place a rolled-up sock between the
chair and your back, just above your waist. Whenever you move
forward or twist, it will drop. I know its annoying, but this
is one of the best tips on the list.
6. Position the table height so that, with your elbows bent to
90 degrees, your hands rest flat on the keyboard without your
wrists needing to bend.
7. Use a wrist cushion that brings the hands and wrists
parallel to the keyboard. Be sure that the keyboard is not
inclined and type with a light touch.
8. Take hourly 5-10 minute breaks from keypunching. During
these breaks walk, massage your forearms, perform wrist and back
stretches, and focus your eyes on objects at least 20 feet away.
9. Eliminate the reflections in your monitor by closing the
blinds and using a table lamp that focuses on your work and not
the monitor.
10. When several monitors are used, put them as close together
as possible.
11. Don't look down! Use an incline board or document holder
to slant or bring your work up to eye level.
12. Don't chase your mouse! Keep it close so that you're not
pulled away from the back of your seat and your forearm can lean
on the armrest.
13. If you're on the phone for extended periods of time, use a
headset.
All right, maybe it did take over an hour and, if you had to buy
a new chair, the $100 was a bit understated. But, it still may
be the best investment that you ever made.

U.S. Told to Issue Global
Warming Plans

SAN FRANCISCO (AP) - A federal judge ordered the Bush
administration to issue two scientific reports on global
warming, siding with environmentalists who sued the White House
for failing to produce the documents.
U.S. District Court Judge Saundra Armstrong ruled Tuesday that
the Bush administration had violated a 1990 law when it failed
to meet deadlines for an updated U.S. climate change research
plan and impact assessment.
Armstrong set a March 1 deadline for the administration to issue
the research plan, which is meant to guide federal research on
climate change. Federal law calls for an updated plan every
three years, she said. The last one was issued in 2003.
The judge set a May 31 deadline to produce a national assessment
containing the most recent scientific data on global warming and
its projected effects on the country's environment, economy and
public health. The government is required to complete a national
assessment every four years, the judge ruled.
The last one was issued by the Clinton administration in 2000.
The administration had claimed that it had discretion over how
and when it produced the reports - an argument the judge
rejected Tuesday.
"The defendants are wrong," Armstrong wrote in the 38-page
ruling. "Congress has conferred no discretion upon the
defendants as to when they will issue revised Research Plans and
National Assessments."
The plaintiffs - the Center for Biological Diversity, Friends of
the Earth and Greenpeace - said the ruling was a rebuke to an
administration that has systematically denied and suppressed
information on global warming.
"It's a huge victory holding the administration accountable for
its attempts to suppress science," said Kassie Siegel, an
attorney for the Center for Biological Diversity, one of the
plaintiffs that filed suit in Oakland federal court in November.
Bush administration officials were still reviewing the ruling
Tuesday and could not comment on it directly, said Kristin
Scuderi, a spokeswoman for the U.S. Office of Science and
Technology Policy, which was named in the lawsuit.
But the administration is complying with the law, Scuderi said.
The U.S. Climate Change Science Program is working on 21
separate reports on global warming's projected effects on the
U.S and has started to prepare a new research plan, she said.
