Greetings and thank you for subscribing! 

The end of the week and what have you done to improve your health? I hope you are so health conscious that you don't require a lot of improvement but I am also a realist and know we all have some area of our life that we could improve...

One area you may not even be aware of is your water. The big story in our part of the world this week was arsenic in our water to the levels of making several people very ill before it was discovered. Sadly they have been told there isn't a filtration/purification unit that can give them healthier water. But that's another story I could tell them different... Also City water isn't what it's cracked up to be in the health area of your life so don't drink, bath or cook with it. Country well water, as ours is, can be hazardous to your health, so have it checked and make the change where necessary... Age-Old Cures, Like the Maggot, Get U.S. Hearing

WASHINGTON, Aug. 24 - Flesh-eating maggots and bloodsucking leeches, long thought of as the tools of bygone medicine, have experienced a quiet renaissance among high-tech surgeons, and for two days beginning Thursday a federal board of medical advisers will discuss how to regulate them.

Leeches, it turns out, are particularly good at draining excess blood from surgically reattached or transplanted appendages. As microsurgeons tackle feats like reattaching hands, scalps and even faces, leeches have become indispensable.

And maggots clean festering wounds that fail to heal, as among diabetics, better than almost anything else, although their use in the United States has been slight, in part because of squeamishness.

But neither leeches nor maggots have ever been subject to thorough regulation by the Food and Drug Administration. So the medical advisers are being asked to create general guidelines about how they should be safely grown, transported and sold.

Since 1976, the F.D.A. has required that makers of medical devices prove that their products are safe and effective. Those already on the market as of that year had to prove their worth; those invented later had to get approval before marketing.

There are unexplored corners of the nation's medical market, however - no one knows how many, but they are certainly a vanishing few - in which doctors and manufacturers have been doing business since well before 1976 without much notice from the agency. The sale of maggots and leeches is one of those corners.

In addressing it, officials first had to decide which part of the agency had oversight: its biological or device division.

"The primary mode of action for maggots is chewing," said Mark Melkerson, acting director of the Division of General, Restorative and Neurological Devices. "For leeches, it's the eating of blood. Those are mechanical processes." Thus, the agency decided that maggots and leeches were devices, Mr. Melkerson said.

For centuries, doctors used leeches in the mistaken view that they would help balance a patient's body fluids, or "humors." Doctors are said to have drained quarts of blood from an ailing George Washington before he died.

With the development of modern medicine, leeches fell out of favor. But in the 1970's they again became popular, this time with microsurgeons.

When reattaching or transplanting an appendage, these surgeons are often able to stitch together arteries, which deliver blood to the appendage and are thick-walled and relatively easy to suture. Far harder is finding and attaching veins, which collect blood for exit and are smaller and more fragile.

After surgery, with few veins connected, blood tends to engorge the appendage, then to clot, turn blue and - in the worst cases - kill it, said Dr. L. Scott Levin, a Duke University hand surgeon. To buy time for the body to create its own veinous attachments, surgeons use leeches.

Leeches naturally inject patients with a potent chemical cocktail that includes an anticoagulant, an anesthetic, an antibiotic and a substance that dilates blood vessels. This cocktail encourages fast bleeding to empty the appendage of extra blood, reducing pressure and allowing veins to form on their own.

In 20 minutes, a leech is usually engorged and removed, though bleeding from the wound may continue for up to 24 hours. If an appendage is large, several leeches are sometimes used at once, Dr. Levin said, adding, "I'll use one to three leeches every couple of hours."

Leeches are also extraordinarily sensitive to proper blood flow and so can offer immediate feedback on how well surgery went, said Dr. Bruce Minkin, a hand surgeon in Asheville, N.C.

"It won't attach if there's not good arterial blood coming in, and sometimes that tells me that I need to go back in," Dr. Minkin said.

Josh Combs, 17, of Asheville needed leeches to save a thumb that had been reattached after being blown off by a homemade firecracker. His mother, Sherry Combs, said she was startled when Dr. Minkin told her what he was going to do.

"I said, 'Can you tell me what you just said again, please?' " Ms. Combs recalled in an interview.

Ms. Combs has two phobias: mushrooms and leeches. So she stood away, over by the door, while a leech was applied to her son's thumb.

"I was afraid he would wake up suddenly and see a leech stuck to his hand," Ms. Combs said. Josh later did just that, with another leech, which he named Fred.

As for maggots, they are unparalleled in their ability to clean festering, gangrenous wounds. For diabetics and others whose wounds fail to heal, maggots, pressed into dying flesh by wire-mesh bandages, can save a limb and speed healing.

Primitive tribes in Australia, the hill people of northern Burma and the Mayans of Central America are known to have used maggots to clean wounds. Napoleon's surgeon in chief noted their effects.

And during World War I, a doctor described seeing two soldiers who had been left wounded on the battlefield for days. When their clothes were taken off, thousands of maggots were found in their wounds. Once the maggots were removed, the doctor was astonished to find clean, pink, living flesh. That doctor, William Baer of the Johns Hopkins School of Medicine, became maggots' modern medical champion.

Another oddity whose regulation will be discussed by the advisory board starting Thursday is bone wax. That product - made of beeswax, olive oil and phenol - has long been used by surgeons to stop bleeding in bones cut during surgery, since neither cauterization nor pressure works well on them. And it is sometimes used to discourage unwanted bone regrowth, said Dr. Glenn Pfeffer, director of foot and ankle surgery at Cedars-Sinai Medical Center in Los Angeles.

"I just had a spur on my foot taken out," Dr. Pfeffer said. "And the surgeon applied bone wax to the cut ends to make sure it doesn't re-form."

This week is no different as my husband brought in a fresh off-the-plant purple-black eggplant to be turned into a delectable food. One of his favorite things.
 
The purple nutrient rich Eggplant, hated by so many yet loved by a lot also.  I usually hear from people we offer fresh eggplant to; "I don't like eggplant because they are bitter." Well if they are not fresh that is the case but fresh off the plant they are not at all bitter and so different.
 
A member of the nightshade family, eggplant counts tomatoes, potatoes and peppers as cousins.
 
The Spaniards of the 16th century called eggplants berengenas, or "apples of love," while some of the botanists of northern Europe of the same period called the species Mala insana, or "mad apple," because they thought that eating it would make a person insane. Equally unfounded was the idea in medieval Europe that it had remarkable properties as a love potion. Some will tell you that an eggplant is low in nutrients but I beg to differ. The following Minerals are found in them; Calcium, Iron, Magnesium, Phosphorus, Potassium, Sodium, Zinc, Copper, Manganese and Selenium and vitamins haven't been left out either, they include; Vitamin C, A, B-6, E, B-12, DFE, Riboflavin, Niacin, Pantothenic acid, Folate and Retinol. I would not call that low in nutrients?
 
Eggplant comes in several varieties.
 
Most often found in stores and gardens are the Large Oval eggplant with various names such as; Dusky, Epic (tear-drop shaped), Black Bell (round to oval, productive), Black Magic, Classic (elongated oval, high quality), Black Beauty, Burpee Hybrid, Ghostbuster  9white, slightly sweeter than purple types oval). Oval Santorini (Whimsical in nature, white in color, this particular 'fruit' needs no watering. Sweet to taste, juicy and quite delicious, this eggplant is beloved by chefs since it does not absorb oil. Lovers of good cuisine should be aware that only in Santorini can one sample this unique delicacy.)
 
Then there are thinner elongated types; Ichiban, Slim Jim,lavender, (turning purple when very small as a peanut) Little Fingers (6 to 8 inch).
 
With a third type and usually looked at as edible ornamental eggplant called the Easter Egg (small white, egg-sized, shaped, turning yellow at maturity).
 
The nutrients vary slightly from one type to the other but all quite nutritious and healthy!
 
Eggplant stores poorly and prefers a temperature of 50 degrees, and therefore doesn't keep very well at room temperature or in the refrigerator. So growing your own is the smart move to assure freshness or if you purchase at the store should be used within the next 48 to 72 hours.
 
Here is a great Greek Style Eggplant dish that most love!

 
Stuffed Eggplant Greek Style
 
INGREDIENTS:
 
4 large eggplants
1/2 cup olive oil
Coarse kosher salt and freshly-ground black pepper
4 onions, chopped medium
6 garlic cloves, chopped
1 28-ounce can whole, peeled tomatoes
1/4 cup parsley
2 tablespoons basil
1/2 teaspoon cinnamon
2 tablespoons red wine vinegar
2 pounds ground lamb
1/2 cup white wine
1/2 teaspoon cumin powder
4 tablespoons butter, plus extra for baking
4 tablespoons flour
2 cups scalded milk
4 eggs
10 tablespoons bread crumbs
1 cup crumbled feta cheese

 
PREPARATION:
·Prick eggplants several times with a fork. On a large baking sheet, roast eggplants in 400 degree oven until soft, 35 to 45 minutes, turning frequently to prevent charring. Cool and slice eggplants lengthwise into 1/2-inch pieces. In a saute pan heat 1/4 cup olive oil and brown eggplant slices, 1 to 2 minutes per side.
Drain on paper towels and sprinkle with kosher salt.

 
SAUCE:
· In a saucepan heat 1 tablespoon olive oil over medium heat, add 1 chopped onion and 2 chopped garlic cloves and saute until tender. Add tomatoes and their liquid. squeeze the tomatoes in your hands into broken into coarse chunks. Add parsley, pepper, basil, cumin,  cinnamon and vinegar. Bring the sauce to a boil, then reduce to a simmer and cook, uncovered,  until sauce becomes thick, about 20-30 minutes.
Yield: 3 1/2 cups sauce.

 
PREPARATION FOR THE LAMB FILLING:
· Heat 1 tablespoon of olive oil with onions and garlic over medium-high heat; saute until tender, 5 minutes.
·Add lamb and brown well, breaking up pieces with a wooden spatula until the pieces are no larger than 1/4 inch.
·Add wine, bring to a boil and cook until wine has reduced almost completely.
·Season meat with salt, pepper and nutmeg and stir in 1/2 cup tomato sauce. Bring to a boil, reduce heat and simmer 1 hour.

 
BECHAMEL SAUCE:
·In a saucepan melt butter over medium-low heat and gradually whisk in flour to make a roux.
Cook 1 minute, whisking constantly, but do not let the roux get brown.
Slowly whisk in warm milk. Bring bechamel sauce to a slow boil, whisking constantly,
then reduce heat to barely simmering and cook 20 - 25 minutes until smooth and thickened.
Remember to stir occasionally so as not to let the sauce stick. Season with salt, pepper and nutmeg. Let cool slightly.
·In a bowl whisk the eggs and then whisk in spoonful of sauce to warm the eggs so they will not scramble.
Slowly whisk in the remaining sauce and adjust seasoning to taste, if needed.

 
FINAL ASSEMBLY:
 
·Preheat oven to 350 degrees. In a large baking dish or lasagna pan (18x8x3-inches) sprinkle 2 tablespoons bread crumbs in bottom and cover evenly with half of eggplant. Drain as much oil from meat mixture as possible (can squeeze meat in a paper towel) and spread over eggplant; top with half of the feta cheese, then with half of remaining bread crumbs. Layer remaining eggplant, then bechamel sauce, remaining feta cheese and remaining bread crumbs in even layers.
Dot top generously with butter. Bake 45 minutes until bubbly and top is well-browned. If necessary, brown top briefly under a preheated broiler. Cool slightly and cut into 3-inch squares to serve.
Serve with extra tomato sauce, if desired.

With feeling like fall in the air it's time to start thinking about preparing for the too soon coming colds and flu season.
 
One simple way of doing that is an addition to your food that gives it flavor as well as builds your immune system, finds and kills hidden bacteria and removes heavy metals? One of those additions is a very healthy and vital food. Also called an herb! Herbs are food you know!
 
This marvelous parsley-like herb used in a lot of Indian, Thai, Mexican and Central American cuisine is known as Cilantro or coriander and a chelator of a magnitude most do not realize. I've found that you either love it or hate it - there doesn't seem to be many people that simply just like it. Considered part of the carrot family? Now I don't know how they came to that conclusion but everything I read says it so I figured it's an interesting tidbit of info.?
 
The seeds are called coriander and the leaves cilantro.
 
Cilantro is also known as Mexican or Chinese parsley and can be used in salads, soups, stews. My favorite use is chopped fresh cilantro with sweet onions and put on everything in sight! Of course my husband is not fond of it and I have to find ways of getting it into food without him realizing it, and that is tricky?
 
Loaded with minerals; Calcium, Iron, Thiamin, Manganese, Magnesium, Phosphorus, Niacin, Potassium, Pantothenic acid, Selenium and Sodium. Then great antioxidants and vitamins such as Vitamin E, Vitamin B-6, Zinc, Folate, Ash, Copper, riboflavin, Vitamin C, Vitamin B-12, Vitamin A and Vitamin K as well as protein and loaded with fiber. Should definitely be considered a great health food and is it any wonder it can assist in building your immune system?
 
A theory from several natural physicians is: if you get rid of the heavy metals in your body, you've removed the source of millions of free radicals and the tissues of the body begin to heal themselves, sloughing off the calcium that causes hardening of the arteries.
 
A doctor by the name of Omura was testing for toxic metals, he noticed that mercury levels in the urine increased after one consumed a healthy serving of Vietnamese soup.  The soup contained Chinese parsley, or as it is better known in the U.S. cilantro. Further testing revealed that eating cilantro also increased the urinary excretion of lead and aluminum.  And when cilantro was used concurrently with the antibiotics or natural antiviral agents and/or fatty acids, Herpes Simplex types I & II or Cytomegalovirus infections could be eliminated for good. Eating it once or twice won't do it? Yes by adding cilantro to your foods that's exactly what happens! Chelate your body by eating a couple of teaspoons of cilantro a day for two weeks (mix it any way you wish)!
 
If you are one of those who hate cilantro but experience lots of illnesses through out the year, it would be smart to give cilantro another try and include it as part of your healthy food. I just made several jars of salsa loaded with cilantro so my husband will be getting his for the next two weeks and never know it?

Cadmium Being Found in More and More Americans

The Centers for Disease Control (CDC) just published its third "National Report On Human Exposure To Environmental Chemicals." Their study tested the blood and urine samples of about 2,400 people for 148 different chemicals.

The final report showed that most people are a walking chemistry lab. And the 475-page report goes out of its way to highlight the amount of cadmium showing up in many more Americans.

What is Cadmium?

Cadmium is a soft metal that is typically used in the manufacture of paints, coatings, platings and plastics. Additionally, when company's mine and processes metals such as zinc, lead and copper, a lot of cadmium is produced as a byproduct.

Coal and mineral fertilizers also contain cadmium. And if you have a cellular phone, chances are it has a nickel-cadmium battery.

How Much is Released Into the Environment Each Year?

The Environmental Protection Agency reports U.S. companies disposed of more than 6.6 million pounds of cadmium and cadmium compounds into our air, water and landfills for the latest reporting year. The 10 states where the greatest amount of cadmium was released into the environment:

Illinois: 2,344,566 lbs
Alaska: 1,274,195 lbs.
Utah: 433,003 lbs.
Idaho: 424,968 lbs.
Nevada: 398,036 lbs.
Oklahoma: 383,912 lbs.
Alabama: 280,415 lbs.
Ohio: 238,512 lbs.
Tennessee: 211,042 lbs.
Pennsylvania: 103,231 lbs.
Its also been estimated there are some 550 million used mobile phones sitting in U.S. homes, waiting to go into landfills. The vast majority of those phones contain nickel-cadmium batteries and the problem increases by 50 million more cellular phones each year.

How Does it Get Into the Water Supply?

When coal is burned to generate electricity, cadmium is released into the air. And when industries process metals such as zinc, lead and copper, cadmium is also released into the air. Once in the air, cadmium particles can travel long distances before falling to the ground and being washed by rainwater into public water supplies. Cadmium particles can also fall right into various rivers, lakes and streams (where cadmium waste can also be found).

And, amazingly, cadmium can also be released into your drinking water from the corrosion of some galvanized pipes in your home or from the underground water mains that bring water to your home.

How Does Cadmium Affect Your Health?

Once cadmium gets into your body, it stays there for a very long time. If you take in just a little bit of cadmium each year, it keeps accumulating in your body.

Long-term exposure to lower levels of cadmium in water leads to a buildup in your kidneys that can cause kidney disease and liver damage. Other long-term effects include lung damage, fragile bones and significant blood damage. Needless to say, cadmium is also a likely carcinogen.

The EPA has an old safety standard in place that says you can be exposed to water containing cadmium levels of 5 ppb and you'll be OK. But even this new CDC study acknowledged recent research shows significantly lower levels of cadmium can result in subtle kidney damage and increased low bone-mineral density. One of the studies they are likely referring to is known as the recent OSCAR (OSteoporosis-CAdmium as a Risk factor) study.

Finally, you don't just have to drink water containing cadmium for it to be absorbed into your body. You can also inhale it from water vapor in the shower and absorb it through water contact with your skin.
