TGIF! A busy week has passed so fast I'm not sure where it went. Thankfully from being very busy with business and goals trying to work in holiday sewing. I suspect the next few weeks are going to pass in a blur with the holidays to prepare for... With 9 grandchildren and 3 great grandsons it requires gifts for all ages and not easy to accomplish... I am usually just about finished by this time but this year was so busy shopping just didn't enter into it very often...

We are expecting cold and rain for the weekend, so I will hunker down around the fireplace and try to accomplish gift tasks...

White Bread, Starch Increases Diabetes Risk

NEW YORK - Fans of white bread, hear this: it increases your risk of type 2 diabetes, the most common form of the illness, new research shows.
 
Other foods that appeared to increase diabetes risk include starchy foods and foods that like white bread encourage a spike in blood sugar, such as crackers, cookies, and cakes.
So people looking to minimize their risk of diabetes should opt for foods that don't cause blood sugar roller coasters, lead author Allison Hodge of The Cancer Council in Victoria, Australia, told Reuters Health. These foods include vegetables, fruit, and multi-grain breads, she said.

Hodge explained that she and her colleagues measured a food's effect on blood sugar levels according to its glycemic index (GI), a term that only applies to carbohydrates. High-GI foods tend to cause a big increase in blood sugar, while low-GI foods have a weaker effect, she said.

To investigate how the glycemic index can influence the risk of type 2 diabetes, Hodge and her colleagues followed 36,787 diabetes-free people between the ages of 40 and 69 for 4 years, noting what they ate and whether they developed diabetes.

Almost 400 people developed diabetes over the 4-year period, the authors report in the journal Diabetes Care.

Hodge and her team found that people who ate the most white bread - half of whom said they had it at least 17 times each week - were more than 30 percent more likely to develop type 2 diabetes.

Starch lovers and people who consistently opted for high-GI foods also showed a significantly higher risk of diabetes over the four-year period.

Hodge explained that high-GI foods may increase diabetes risk by causing weight gain, which increases the risk of type 2 diabetes.

Also, "A high GI diet may also require the pancreas to produce a lot of insulin to deal with the high blood glucose levels, and this may exhaust the cells that produce insulin, and contribute to development of type 2 diabetes," Hodge added.

In addition, the researchers found that people who ate large amounts of carbohydrates, sugars and magnesium appeared to be somewhat protected from type 2 diabetes.

Although the reasons behind this association are somewhat unclear, Hodge suggested that diets high in carbohydrates may also be low in fat, and protect the functioning of insulin. Sugars that were linked to a lower diabetes risk included those found in fruit, she said, and people should stick to carbohydrates and sugars found in low-GI foods, such as fruits, vegetables and whole grains, which also tend to be high in magnesium.

Other relatively low-GI foods include certain breakfast cereals, pasta, and basmati rice, which has a lower GI than brown or white rice, she said.

But moderation is key, even with healthy foods, she said. "As with any food, if eaten to excess, overweight and obesity will ensue, and increase the risk of type 2 diabetes more than any change in food choices can reduce it."

Cancer is on the rise but shouldn't be according to politicians!

The Nixon White House promised a cure for cancer in time for the American bicentennial in 1976. That anniversary produced a spectacular OpSail display in New York Harbor, but alas, no cure for cancer. That statement came in front of and along with National Cancer Institute's (NCI) huge request for millions of dollars to bring that about.

NCI Got the money but cancer continued to rise not decrease!

Andrew von Eschenbach, MD, the now director of the NCI, outlines his "challenge vision" for the future of cancer research, and makes the astonishing assertion that cancer will be essentially conquered by 2015.

In light of the NCI's recent budget request of more than $6.2 billion dollars for the financial year 2005, which will go into the pockets of a number of pharmaceutical company's pockets... Can we take Dr. von Eschenbach's serious?

Cancer annually kills 6.2 million people around the globe, and causes intense suffering to many millions more. The World Health Organization (WHO) predicts that by the year 2020 cancer rates will further increase by 50 percent to 15 million new cases per year (The WHO 2004). In the US alone, cancer afflicts nearly 1.4 million and kills 563,700 annually.

"Decades of breakthroughs have raised hopes again and again for people with cancer," wrote Fortune editor Clifton Leaf in his article on losing the war on cancer, "but have failed to deliver on expectations" (Leaf 2004). Interferon, interleukin-2, Endostatin, high-dose chemotherapy for breast cancer-most the claims have turned out to be highly exaggerated. For the last ten years we have been hearing about the wonders of `targeted´ therapies and how they too are going to revolutionize oncology. But despite Dr. von Eschenbach's enthusiastic endorsement, the actual track record of these treatments has been disappointing.

That Green Leaf Of Health!

When making my lunch of wilted greens. I dropped my leaves into the skillet of hot Olive Oil, Rice Vinegar, chopped celery and sweet chopped onion my mind went back to Popeye and Olive Oil, the cartoon characters that were so popular in my children's childhood. And remembered the muscles Popeye sported and wondered if that could possibly be true? Would these great green leaves build muscles.  Hence this weeks great green food, Spinach!
 
A few years ago my then six year-old granddaughter said, "No way am I eating spinach, it tastes nasty!"  We coaxed her into trying it, knowing that fresh spinach, cooked or not, doesn't resemble the taste of canned, that she had tried before. Her remarks after eating a whole serving was "Look everybody, take a picture, I'm eating spinach and it's good!" The grandchildren eat a lot of spinach and like it fixed in various ways, when around our house.
 
Spinach originally came from Persia  - now known as Iran - where its name was called "aspanakh". By the 1300s, it had spread to Europe and Britain where it was particularly popular during Lent. It was being cultivated in North America by the early part of the 19th century. Was used in medieval times by artists to produce a green pigment for illuminated manuscripts. It is one of the few non toxic natural green pigments, and is still used today as body paint. 
 
Spinach is a cool season crop and belongs to the goosefoot family along with Swiss chard and beets. Spinach is low in calories, and is a good source of vitamins and minerals, especially iron. Spinach was, supposedly, the first frozen vegetable to be sold.
 
But does it build muscles as Popeye spouted?
 
Scientists say those green leaves help reduce your risk of age-related macular degeneration, cancer, heart disease and neural tube defects. Also said to reduce the risk of cancer, heart disease, stroke and cataracts. And the healthy dose of potassium and calcium found in spinach can help regulate your blood pressure. The benefits of spinach don?t stop there! Spinach and other leafy greens also provide folic acid, which is known to reduce the risk of neural tube defect and heart disease. Some studies have gone so far as to say it even improves memory. Calorie for calorie, leafy green vegetables like spinach with its delicate texture and jade green color provide more nutrients than any other food. Although spinach is available in grocery stores here throughout the year their season runs from March through May and from September through October when it is the freshest, has the best flavor and is most readily available.
 
I suppose Popeye was right because of all the great energy and muscle building minerals and vitamins spinach contains. That being the minerals; Calcium, Iron, Magnesium, Phosphorus, Potassium, Sodium, Zinc, Copper, Manganese and Selenium. Along with the vitamins  C, E, B-12, A, B-6, Folate, Thiamin, Riboflavin, Niacin, Folic acid, Pantothenic acid and Retinol.
 
If you do not grow your own, it can be found fresh in most grocery stores, in the U.S., year round either bunched or as leaves.  Shop for vivid, dark green spinach with firm leaves and stems. Avoid those with excessively thick, tough or woody stem ends. Smooth-leaf spinach is most often sold in bunches. Medium and Savoy varieties are more likely to be found loose or washed and partly stemmed in packages. I usually have a few jars of organic spinach in my canning cabinet of fruits and vegetables, grown by my husband each year, except this year. He failed to plant enough for me and the bugs and worms that love it as well?
 
Cleaning tip: It is imperative that fresh spinach be washed many, many, many times to removed dirt and little crawly creatures that love to invade those organic leaves.
 
It's relatively perishable and should be wrapped and stored in the refrigerator. It's best eaten as soon as possible after purchase or picking.
 
My Simple Wilted Salad that started the thought on spinach:
 
Enough for one person!
 
6 cups fresh, clean spinach leaves
3 Tablespoons Olive Oil
1 Tablespoon Seasoned Rice Vinegar
½ cup chopped fresh sweet onions
1 Rib of celery chopped and/or ¼ cup chopped bell pepper
 
Heat Olive oil and vinegar in a deep skillet, large enough to hold the initial six cups of spinach, placed over a medium hot burner. Add onions and celery, sauté for about two or three minutes ( I like the onions and celery to still have a crunch to them). Add spinach and toss constantly until all leaves are coated with olive oil and vinegar and wilted. Remove from burner and serve warm as a salad or side dish!
 

My mother always made her wilted salad with fresh mixed loose leaf lettuce and spinach greens with regular vinegar and sugar, which was a different flavor?

Doctors Eye Apologies for Medical Mistakes

CHICAGO (AP) - It's a basic lesson children learn even before their ABCs - say you're sorry when you hurt someone. But it's now being taught in the grown-up world of medicine as a surprisingly powerful way to soothe patients.

Some tort reform advocates say an apology can even help doctors avoid malpractice lawsuits, especially when combined with an upfront settlement offer.

The idea defies a long tradition in which doctors were taught to be infallible and gained a Godlike image that critics say created an uncomfortable barrier between physicians and patients.

The softer approach, now appearing in some medical school courses and hospital policies, is drawing interest as national attention has turned to reducing both medical errors and the high cost of malpractice insurance, blamed for driving doctors out of business.

Some malpractice reform legislation, including a proposed "Sorry Works" program in Illinois, endorses the idea of apologizing when something goes wrong.

Doctors' often paternalistic relationship with patients is giving way to an understanding that "it's OK to tell the patient the whole story," said Dr. Paul Barach, an anesthesiologist and patient safety researcher at the University of Miami.

It's "a huge sea change as far as our relationships with patients," he said.

One catalyst, Barach said, has been emerging evidence about the scope of medical errors, including the Institute of Medicine's 1999 report that mistakes kill as many as 98,000 hospitalized Americans each year.

Dr. Rita Charon, who teaches medical students at Columbia University about forgiveness, says an apology can help both doctors and patients. Still, she said, there are some errors "that we should not absolve one another for."

Bob Vogt, a retired Cadillac dealership employee from Belleville says an apology might not have stopped him from suing over the misdiagnosis of a brain aneurysm in 1990 that he contends left his wife severely disabled. But it might have saved his relationship with the doctor, once a close friend, he said.

"If he had come forward and not tried to conceal the thing, I probably would have had a lot better feeling," Vogt said. "You don't want them to be Godlike. They have to be willing to step up to the plate and say, 'I made a mistake.'"

Dr. Michael Woods, a Colorado surgeon and author of "Healing Words: The Power of Apology in Medicine," said his own experience a decade ago illustrates the impact of the traditional way doctors have handled mistakes.

Woods was overseeing surgery to remove a patient's appendix. A minimally invasive surgery was planned, but a medical resident accidentally punctured an artery, which led to a more extensive operation. The patient was unhappy with how Woods handled the aftermath, including one visit during which he propped his feet up on the desk and, in her opinion, acted as if he didn't care.

Woods said he wanted to apologize but legal advisers recommended breaking off contact with the patient when she threatened to sue.

Now a consultant to doctors and the malpractice insurance industry, Woods said his research has shown that being upset with a doctor's behavior often plays a bigger role than the error itself in patients' decisions to sue.

At the University of Michigan Health Systems, encouraging doctors to apologize for mistakes is part of a broader effort to help doctors "feel comfortable in being honest with their patients," said Rick Boothman, a former trial attorney who launched the practice there in 2002.

The system's annual attorneys fees have since dropped from $3 million to $1 million, and malpractice lawsuits and notices of intent to sue have fallen from 262 filed in 2001 to about 130 per year, Boothman said.

Supporters of the concept want the Illinois Legislature to adopt a similar program called "Sorry Works," which recommends offering apologies and financial settlements when mistakes occur.

Under the proposed pilot program, two Illinois hospitals would be recruited to adopt the policy over a two-year trial period to see if it reduces costs.

While the number of settlements would likely increase, lawsuits and sky-high jury awards would decrease, said Doug Wojcieszak, an Edwardsville public relations consultant whose victims' rights advocacy group proposed "Sorry Works."

Apologies and upfront settlement offers could mean the difference between settlements costing thousands of dollars and drawn-out malpractice lawsuits costing millions in attorneys fees and jury awards, Wojcieszak said.

When Wojcieszak's brother died after doctors failed to diagnose a heart attack, he said his father wanted to make sure it never happened again but couldn't get doctors to talk to him. "A lawsuit was the only way we could get answers," he said.

"Sorry Works" was part of broader Illinois' malpractice reform efforts that ended in a legislative stalemate last summer, but Wojcieszak is pushing to revive the plan during the Legislature's fall session, starting this week.

He says the idea came from an honesty policy the Veterans Affairs hospital in Lexington, Ky., adopted in 1987 after two big malpractice cases cost the hospital over $1.5 million.

Dr. Steve Kraman, then the hospital's chief of staff, said he helped create the policy as an alternative to the traditional "shut up and fight" risk management model. The center's liability costs subsequently dropped below those of comparable VA hospitals, he said.

"Not only was it the right thing to do, but over the long haul, we were saving money by doing things this way," he said.

NASA Studying 'Rain Man's' Brain

SALT LAKE CITY (AP) - NASA scientists are studying autistic savant Kim Peek, hoping that technology used to study the effects of space travel on the brain will help explain his mental capabilities.

Last week, researchers had Peek - who was the basis for Dustin Hoffman's character in the 1988 film "Rain Man" - undergo a series of tests including computerized tomography and magnetic resonance imaging, the results of which will be melded to create a three-dimensional look at his brain structure.

The researchers want to compare a series of MRI images taken in 1988 by Dr. Dan Christensen, Peek's neuropsychiatrist at the University of Utah, to see what has since changed within his brain.

Not only are Peek's brain and his abilities unique, noted Richard D. Boyle, director of the California center performing the scans, but that he seems to be getting smarter in his specialty areas as he ages is unexpected.

The 53-year-old Peek is called a "mega-savant" because he is a genius in about 15 different subjects, from history and literature and geography to numbers, sports, music and dates. But he also is severely limited in other ways, like not being able to find the silverware drawer at home or dressing himself.

"The goal is to measure what happens in Kim's brain when he expresses things and when he thinks about them," said his father, Fran.

He came to the attention of NASA researchers at the Center for Bioinformatics Space Life Sciences at the NASA-AMES Research Center when he spoke in late October at a Rotary Club in central California.

When Kim Peek was born, doctors found a water blister on the right side of his skull, similar to hydrocephalus. Later tests showed his brain hemispheres are not separated, forming a single, large "data storage" area.

It is likely that is why Peek has been able to memorize more than 9,000 books, his father said.

But he has lagged in other areas; his motor skills developed more slowly than those of his peers.

Fran Peek doesn't need the test results to know much has changed for his son in the last 16 years.

He was a shy young man with few social skills when the movie propelled him to public notice. But now, after speaking to more than two million people over the years, his father says he become calmer and is more at ease speaking in front of people.

He also no longer reads only nonfiction, Fran Peek said, but has dabbled with some fiction, such as books by Stephen King, because that is what so many people talk about.

When he's home in Utah, Peek spends afternoons at the Salt Lake City Public Library poring over books, even memorizing phone books and the Cole's address directory.

Kim Peek was the model author Barrow Morrow used for the original "Rain Man" script and screenplay, but the final product retained only a small part of the original story.
