Higher vitamin E
levels associated with lower mortality in men over 19 year period
The results of a large study of older male smokers,
published in the November, 2006 issue of the
American Journal of
Clinical Nutrition, revealed that having higher blood levels of
vitamin E is associated with a reduced risk of dying from all causes as
well as specific causes including cardiovascular disease and cancer
during a 19 year follow-up period.
Researchers at the National Cancer Institute in Bethesda, Maryland, in
collaboration with the National Public Health Institute in Helsinki,
Finland, evaluated data from participants in the Alpha-Tocopherol,
Beta-Carotene Cancer Prevention (ATBC) Study, which enrolled 29,133 male
smokers aged 50 to 69 who resided in Finland. Blood samples collected
from 29,092 participants upon enrollment were analyzed for alpha-tocopherol
(vitamin E), beta-carotene, retinol, and cholesterol levels.
Mortality was tracked for up to 19 years of follow-up, during which
there were 4,518 deaths from cancer, 5,776 deaths from cardiovascular
disease, and 3,002 deaths from other causes. Men whose serum alpha-tocopherol
levels were in the highest one-fifth of participants had an 18 percent
lower risk of death from all causes than those in the lowest fifth. The
risk of dying from cancer was 21 percent lower, that of cardiovascular
disease was 19 percent lower, and the risk of death from other causes
was 30 percent lower for men in the top fifth compared to those whose
vitamin E levels were lowest. Among cancer deaths, the risk of dying
from prostate cancer was reduced by 32 percent and lung cancer by 21
percent for men in the highest group. Reductions in mortality risk were
associated with values of up to 13 to 14 milligrams alpha-tocopherol per
liter, which is within the normal range.
"Our findings support a more robust role for circulating alpha-tocopherol
in overall, cancer, and cardiovascular disease mortality than was
suggested by previous studies," the authors write. In their discussion,
they note the discrepancies between their findings and those of previous
trials concerning the effect of supplementing with vitamin E on
mortality, and observe that high doses of alpha-tocopherol given alone
reduce plasma concentrations of gamma and delta tocopherols, which might
help explain results that found little or no benefit for vitamin E.
In an accompanying editorial, Maret G. Traber of the Linus Pauling
Institute writes that only 12 milligrams per day vitamin E was estimated
to result in serum levels within the middle range of participants in the
ATBC study. However," Dr Traber notes, "12 mg vitamin E is an amount
that is greater than that estimated to be consumed by 93% of men and 96%
of women in the United States." She suggests that "the vitamin E
recommended dietary allowance of 15 milligrams per day may yield optimal
serum concentrations to achieve significant reductions in chronic
disease mortality. However, 15 mg/d may be a vitamin E intake that is
achieved only with supplements, given the dietary habits of most
Americans and the observation that vitamin E-rich food sources are less
popular foods."

Oct. 31, 2006 -- Women who take oral contraceptives have a slightly increased
risk of developing breast cancer early in life, with the risk being greatest for
women who use oral birth control before they have their first child, a new
analysis suggests.
Researchers combined the findings from 34 previous studies designed to examine
the impact of oral contraceptive use on breast cancer diagnosed before
menopause.
Twenty-one of 23 studies that followed women who took oral birth control before
having their first child showed an increased risk of early breast cancer.

The Bashful
Bulb
Beets or beetroot! So bashful they keep their heads in
the ground.

I don't know how true it is but it is said that Beets reminded early
cooks of a bleeding animal when they cut them open, so they started
calling them "beets." This was derived from the French word bête,
meaning "beast."
Some refer to this purplish wonder as beets others as beetroot. Either
way is correct. Some people only eat the root bulb but the greens are
very nutritional and tasty and one of my favorites.
Once you've tasted fresh beets in the peak of their season from June
through October, you'll delight in their sweetness and versatility. I
should mention that they have the highest sugar content of all the
vegetable kingdom. There are factories that process the sugar from the
beets, called Sugar Beet Factories!
Beets and beet greens contain the health building minerals calcium,
Iron, magnesium, Phosphorus, Potassium, Sodium, Zinc, Copper, Manganese,
Selenium along with the vitamins C, B-6, B-12, A, E, Thiamin,
Riboflavin, Niacin, Pantothenic acid, Folate, and Retinol.
Experts believe that the red pigmentation of beetroot contains certain
anti-cancer agents. Beetroot has for many years been used as a treatment
for cancer in Europe. Specific anti-carcinogens are bound to the redish/purple
coloring, which supposedly helps fight against cancer and beetroot also
increases the uptake of oxygen by as much as 400 percent. Additional
studies are taking place to add support to these claims.
The green leafy part of the beetroot contains beta-carotene and other
carotenoids,( Carotenoid refers to plant pigments - of which there is a
family of about 600 different types. These all function as antioxidants.
The yellow, orange, and many of the red pigments in fruits, vegetables,
and plant materials are usually carotenoids.) The roots and greens are
especially good for women during their menstrual period and those
planning pregnancy.
Preparing raw beets requires a mindset; put on an apron, to catch the
splatter and roll up your sleeves. Next, tell yourself that for that
entire day you will be the proud owner of a pair of red hands that look
like you just killed someone unless you wear gloves. Then, get to work
on the beets.
For salads, cut off the root and stem ends, peel and coarsely grate the
beets. Place them on the top of an individual salad as a garnish or
serve them in a separate bowl tossed with seasoned rice vinegar to be
passed at the table. If you toss the beets into the salad, the entire
salad will blush. Sometimes this may be a desired effect when you want
to give your veggies a rosy glow.
Beets are famous for blushing or, more commonly called bleeding. To
reduce bleeding and preserve more of the flavor as well as the
nutrients, cut beet tops off, leaving at least 1" of stems intact.
Usually when you buy fresh beetroot it will still have the leaves and
stalks attached. To cook the beetroot simply cut off the stalks making
sure to leave some of the stalk in tact as it helps to hold in the
nutrients.
Beetroot can be steamed or cooked in boiling water. Cooking time can be
from 20 to 50 minutes depending on the size of the beetroot and your
desire for soft or crunchy. Test the beetroot with a skewer: when it's
soft to your desire, remove it from the heat and cool it under running
water - this will make the skin easier to remove for serving.
Try raw:
Grated finely can add to other vegetables.
Mix grated beetroot with raspberry vinegar or seasoned rice vinegar.
Mix grated beetroot, grated orange rind and orange juice for a tasty
salad.
Plain grated beetroot is great on hamburgers or veggie burgers.
You can serve cooked beetroot as a hot vegetable accompaniment to a
meal; or allow it to cool and slice it to put on a homemade burger. Cut
into cubes and stir-fry it with some steamed cubed potatoes and pumpkin.
Add a little garlic and some diced onions ? this makes a delicious
vegetable dish to serve with the rest of your meal.
Roasted: To roast the beets, its best to peel them and cut off the root
and the stem ends. Slice them, toss or spray a tablespoon or two of
Olive oil, and spread them out on a roasting pan. Roast at 400 for about
25 - 30 minutes, turning mid way through. To add a little pizzazz, when
tossing them in the oil prior to roasting, sprinkle with salt and some
dried thyme, dill, marjoram, or oregano ad onion chunks for more flavor.
Prepare the greens as close to the purchase time as possible to retain
all those health benefits. Wash them thoroughly, and coarsely chop. Add
enough water to cover the bottom of the saucepan by 1/2". Squeeze in the
juice of one half lemon and add a little salt, onion powder, lemon
pepper and a hint of cayenne. PACK greens into a smaller saucepan than
you might think you need--one bunch of beet greens cooks down to
practically nothing! Cook uncovered over high heat, which allows some
of the oxalic acid in the greens to escape, a desirable process, since
oxalic acid inhibits the absorption of calcium contained in the greens.
Today's recipe is from a former patient whose mother won a Betty Crocker
baking contest with it years ago and a lot of money, but she gave the
recipe to me so don't worry about it being a copywrite problem? This is
oh so good and even my kids and grandkids eat it without knowing what's
in it? Color is nice as well as a delightful flavor?
Beet Cake

Oil and flour 2
round cake pans
Heat oven to 350°
Ingredients:
1 ½
cups olive oil
2 cups sugar
3 eggs
2 cups flour
2 teaspoons baking soda
3 teaspoons ground cinnamon
1 teaspoon salt
1 cup crushed pineapple (drained)
1 cup Flaked coconut
1 cup chopped nuts (pecan or walnuts)
1 cup cottage cheese
1 cup shoestring beats with juice
Begin by;
Beating with mixer olive oil, sugar, eggs until thick and lemon yellow;
Add to it flour, baking soda, ground cinnamon, salt mix for 2 to 3
minutes.
Add and Mix by hand the following
Crushed pineapple (drained), coconut, chopped nuts, cottage cheese
Mix well then add beats with juice and stir until mixed thoroughly and
evenly colored.
Pour even amounts into 2 cake pans.
Put into oven and 350°F,
bake 1 hour or until cake springs back when touched lightly.
This is best frosted with the old fashioned Philadelphia Frosting;
Cream together the following ingredients for philly frosting'
1- box powdered sugar
1- stick (4 oz.) butter
1- tsp pure vanilla flavor
When creamed put one-fourth of the icing on the first cake layer and
spread. Top that with second cake layer and frost whole cake or just the
top, either way works well? refrigerate until ready to eat.
Enjoy this delightfully healthy dessert!

The Healing
Problem
He was 47. Four years earlier, he had gastric bypass surgery. It
worked, and he lost more then 100 pounds. Before the surgery, he
had diabetes, high cholesterol and sleep apnea, but those
diseases melted away along with the excess pounds.
About two years later, he developed a hernia, a common
complication of abdominal surgery. He had an operation to fix
it, and that's when the latest round of trouble began. After the
operation, he developed a serious infection. He needed weeks of
intravenous antibiotics, and he was still living with the
consequences: the incision that the doctors made to repair the
hernia never healed. It remained an open wound, and no one could
figure out why. That wasn't the only mystery: six months ago,
routine blood work showed that he had developed anemia (too
few red blood cells) and neutropenia (too few
infection-fighting white blood cells). He had a slew of
tests, but no one could explain this newest complication either.
It is a truism in medicine that the difficult diagnoses are most
likely to be made by the oldest or the newest physicians. The
oldest because they have seen so much, know what it's not and
also know, like Sherlock Holmes, that when everything else has
been ruled out, what is left, no matter how unlikely, is
probably the answer. The newest because they are fresh from the
books and can follow the clues without a sense of just how
unlikely the destination may be.
"It seems somehow unfair," Pastel reflected when I spoke with
her not long ago. "Here's this guy doing everything he can to
get better, but what he was doing - what he was told to do - was
making him worse."

Warming Threatens Ruins

NAIROBI, Kenya (AP) - From ancient ruins in Thailand to a
12th-century settlement off Africa's eastern coast, prized sites
around the world have withstood centuries of wars, looting and
natural disasters. But experts say they might not survive a more
recent menace: a swiftly warming planet.
"Our world is changing, there is no going back," Tom Downing of
the Stockholm Environment Institute said Tuesday at the U.N.
climate conference, where he released a report on threats to
archaeological sites, coastal areas and other treasures.
Recent floods attributed to climate change have damaged the
600-year-old ruins of Sukhothai in northern Thailand, the report
said, while increasing temperatures are "bleaching" the Belize
barrier reef and a rising sea level is sending damaging salt
into the wetlands of Donana National Park in Spain.
Downing also said the ocean could eventually engulf ancient
settlements such as the Old City on Kenya's Lamu island, which
dates to the 12th century and has been named a UNESCO World
Heritage site.
Lamu is vital to Africa's history; Omani Arab sultans who ruled
the eastern coast of the continent first settled there before
moving to Zanzibar. They left behind winding alleyways and an
unspoiled 8-mile-long sandy beach that now attracts tourists to
Lamu.
Thailand's ruins of Sukhothai - which means "dawn of happiness"
- include artifacts from ancient royal palaces, Buddhist temples
and city gates. Founded in 1238, Sukhothai was once capital of a
Thai kingdom.
"Some of the developments we are faced with mean the parks of
today may not be relevant tomorrow," said Achim Steiner,
executive director of the United Nations Environment Program.
"Adaptation to climate change should and must include natural
and culturally important sites."
He said the response cannot be to simply "lock things up in
museums and zoos." Instead, he said, governments worldwide must
act to stem global warming.
Scientists attribute the past century's 1-degree rise in average
global temperatures at least in part to the accumulation of
carbon dioxide, methane and other greenhouse gases in the
atmosphere - byproducts of power plants, automobiles and other
fossil fuel-burning sources.
Continued global warming will lead to shifts in climate zones,
seas rising from heat expansion and runoff from melted land ice,
and more extreme weather, scientists say.
The two-week climate conference, which started Monday, has drawn
delegates from around the world to address climate change. The
189 parties to the 1992 U.N. climate treaty are divided into two
groups: the 165 that ratified the treaty's 1997 Kyoto Protocol
mandating cutbacks in greenhouse gases, and a handful of others,
led by the United States, that did not.
Under the Kyoto accord, 35 industrial countries are obliged to
reduce their emissions by 5 percent below 1990 levels by 2012.
President Bush rejected the Kyoto Protocol in 2001, saying it
would hamstring the U.S. economy and objecting that it excluded
poorer countries from its mandates.
Downing, who wrote "The Atlas of Climate Change," with Kirstin
Dow of the University of South Carolina, said the report will
help people see that climate change goes beyond extreme weather
and higher temperatures.
"These are losses that affect all of us," he said. "All of us
will feel the loss of our culture."
