Greetings and thank you for being a reader...

For the U.S. this is the big Thanksgiving Week where we find time to reflect on what we are thankful for, but is also the week of feast and fat!  Food seems to be the excepted way of celebrating everything in our life, but is oh so dangerous to some... So watch for the overindulging syndrome of eat and sleep then gain fat in places it isn't needed!

This time of the year brings out a lot of gratitude in me as I'm sure in you and I have so much to be thankful for that I absolutely do not know where to start. I'll start with for your support and interactive-ness and your desire to learn and be healthy! Second, but my no means, less important, my family who has supported my endeavors and put up with my sometimes unasked for advice without complaining.

There will not be an ezine on Wednesday or Thursday but back on Friday 11/26/04... Have to clean house and make a lot of beds as well as some upkeep around here before the family arrives!  I received a very early call from my daughter in Temecula/Menefee area of California this morning tell me that the ground is white with snow and still falling at that time. Something that isn't normal for them. Of course the grandsons thought it was cool and exciting... So to you Southern Californians that aren't use to snow, enjoy it!

GOP Looking to Repeal Food Labeling Law

WASHINGTON (AP) - Telling consumers where their meat, fruit and vegetables came from seemed such a good idea to U.S. ranchers and farmers in competition with imports that Congress two years ago ordered the food industry to do it. But meatpackers and food processors fought the law from the start, and newly emboldened Republicans now plan to repeal it before Thanksgiving.

As part of the 2002 farm bill, country-of-origin labeling was supposed to have gone into effect this fall. Congress last year postponed it until 2006. Now, House Republicans are trying to wipe it off the books as part of a spending bill they plan to finish this month.

House Majority Whip Roy Blunt, R-Mo., said he expected the Senate to agree to repealing the measure, whose main champion two years ago was Senate Minority Leader Tom Daschle, D-S.D.

"I can't find any real opposition to doing exactly what we want to do here," Blunt said.

President Bush never supported mandatory labeling. Chances for repealing the law improved when Daschle, still his party's leader in the Senate, was defeated for re-election Nov. 2.

"For Republicans to deny Americans the opportunity to 'buy American' at the grocery store is anti-consumer, anti-farmer and anti-rancher," Daschle said Wednesday.

He and other Western senators were making an effort to keep repeal of the labeling law out of the wide-ranging spending bill Congress plans to pass before it leaves. Democrats acknowledged there was not much of an appetite to wage a battle over it.

Those who want the repeal say the labeling system is so expensive that it far outweighs any benefit to consumers. The Agriculture Department has estimated the cost could range from hundreds of millions to billions of dollars in the first year alone.

"Everybody realized it was going to cost a lot of money, and ranchers were going to have to bear most of that," said Sen. Jim Talent, R-Mo., chairman of a Senate Agriculture, Nutrition and Forestry subcommittee on the issue.

Food processors and other opponents of mandatory labeling say they are amenable to voluntary labels.

Grocery Manufacturers Association spokeswoman Stephanie Childs cited the government's voluntary standards for labeling organic food and said, "That's the sort of thing we should be looking toward."

Supporters of the labeling requirement says opponents want the repeal so producers will not have to spend money getting ready to follow the law. The House Agriculture Committee approved legislation this year to substitute a voluntary system for the current law.

The issue divides cattlemen and other livestock producers. Many of the bigger livestock and feedlot operations, as well as food processors, do not want mandatory labeling.

Producers in favor of mandatory labels believe consumers will prefer U.S.-grown food over foreign imports. The law requires companies to put country-of-origin labels on meat, vegetables and fruit.

"We really feel that country-of-origin labeling is one of the key things we need to keep ourselves competitive in that market. I understand the trade-offs," said Doran Junek, a rancher in Brewster, Kan. Junek also is executive director of the Kansas Cattlemen's Association, an affiliate of R-CALF United Stockgrowers of America.

Consumer groups say the issue is whether buyers have a right to know where their food came from.

"When nutrition labeling was suggested by advocates 25 years ago, the industry kept saying, 'Oh, we can't do that,'" said Carol Tucker Foreman, director of food policy for the Consumer Federation of America. "Look, they've done it. They love it. Consumers use it."

The wrangling does not affect fish because Congress did not include fish last year when it delayed the mandatory labeling. Fresh and frozen fish will be required to carry labels beginning in April.

Heavy computer use tied to glaucoma


LONDON - Men who spend hours staring at a computer screen may be at increased risk for glaucoma, a disease that can cause blindness, Japanese doctors say.

Researchers studied more than 10,200 workers with an average age of 43 for signs of glaucoma, a gradual disease of the optic nerve leading to loss of peripheral vision.
 
The workers were randomly selected for testing at their medical check-up. Participants filled out questionnaires about their eye health and use of computers at home and in the office.

Dr. Masayuki Tatemichi of Toho University School of Medicine in Tokyo and his colleagues found 165 subjects had suspected glaucoma, according to tests.

Those who sat in front of a computer for more than eight hours a day were twice as likely to have glaucoma as those who were light or medium users, the researchers found.

There appeared to be a significant link between workers who were short sighted or myopic and were heavy users of computers.

The optic nerve may be more vulnerable to computer stress in those who are short sighted compared to those with normal eyes, the team speculated.

Since more workers are now using computers, doctors may need to monitor the prevalence of myopia and signs of glaucoma in workers, the researchers said in the Journal of Epidemiology and Community Health, published by the British Medical Association.

The researchers acknowledge the study is limited by its cross-sectional design, adding the results may be skewed since most of the volunteers were male.

They note more research is needed to investigate the suspected link.

Glaucoma may be caused by high pressure inside the eye. It affects one in 100 Canadians over age 40, according to the Canadian Opthamalmological Society.

Bitter Sweet but Oh So Good For You!
 
This week's Ask Lena Health Q & A question brought about this study and one I find to be very interesting as well as healthful! This great fruit is just about ready to come into season and will last through spring.  I can hardly wait! There is nothing so tasty as fresh fruits or vegetables?
 
A large citrus fruit related to the orange, lemon and pomelo. Grapefruits are categorized as white, pink or ruby. However, this terminology doesn't reflect their skin color, which is either yellow or pinkish-yellow, but simply describes the color inside. Grapefruits usually range in diameter from four to six inches, with some varieties featuring seeds while others are seedless. The wonderful flavor of a grapefruit is like paradise, just as its Latin name Citrus paradisi connotes. It is juicy, tart and tangy with an underlying sweetness that weaves throughout.
 
History of grapefruit
 
Grapefruits have a rather recent history, having been discovered in Barbados in the 18th century. Many botanists think the grapefruit was actually the result of a natural cross breeding which occurred between the orange and the pomelo, a citrus fruit that was brought from Indonesia to Barbados in the 17th century.
 
The resulting fruit was given the name ´grapefruit` in 1814 in Jamaica, a name, which reflects the way it's arranged when it grows - hanging in clusters just like grapes.
 
Grapefruit trees were planted in Florida in the early 19th century, although they did not become a viable commercial crop until later that century. Florida is still a major producer of grapefruits, as is California, Arizona and Texas. Other countries that produce grapefruits commercially include Israel, South Africa and Brazil.
 
The National Cancer Institute placed grapefruit on their list of cancer preventative foods. Low in calories and actually known to trigger weight loss.
 
An excellent source of vitamin C, that helps to support the immune system. Vitamin C-rich foods like grapefruit are known to help reduce cold symptoms or severity of cold symptoms; Numerous scientific studies have found vitamin C to be a cold-fighter. Also shown to prevent free radical damage that triggers the inflammatory processes, and reduces severity of inflammatory conditions, such as asthma, osteoarthritis, and rheumatoid arthritis. Vitamin C is beneficial to promoting cardiovascular health. Owing to the multitude of vitamin C's health benefits, it is not surprising that research has shown that consumption of vegetables and fruits high in this nutrient is associated with a reduced risk of death from all causes including heart disease, stroke and cancer.
 
Also an excellent source of Vitamin A the healthy skin nutrient!
 
Grapefruit may be the less favored citrus choice when compared to the sweeter orange, but grapefruit sparkles with health promoting compounds that are known to help:
 
* fight cold symptoms
* prevent certain forms of cancer
* prevent heart disease

 
New research presented August 2004 at the 228th National Meeting of the American Chemical Society provides two more reasons to drink grapefruit juice: protection against lung and colon cancer.
 
Nutrients in grapefruit are; Vitamins A & C, Lycopene, Limonoids and Pectin,
 
In humans, drinking three 6-ounce glasses of grapefruit juice a day was shown to reduce the activity of an enzyme that activates cancer-causing chemicals found in tobacco smoke. In rats whose colons were injected with carcinogens, grapefruit and its isolated active compounds (apigenin, hesperidin, limonin, naringin, naringenin, nobiletin) not only increased the death of cancer cells, but also increases the production of normal colon cells. Researchers also confirmed that grapefruit may help prevent weight gain by lowering insulin levels.
 
Lycopene; the rich pink and red colors of grapefruit are due to lycopene, a carotenoid phytochemical. Lycopene appears to have anti-tumor activity. Among the common dietary carotenoids, lycopene has the highest capacity to help fight oxygen free radicals, which are compounds that can damage cells.
 
Limonoids; phytochemicals in grapefruit called limonoids inhibit tumor formation by promoting the formation of glutathione-S-transferase, a detoxifying enzyme. This enzyme sparks a reaction in the liver that helps to make toxic compounds more water soluble for excretion from the body. Pulp of citrus fruits like grapefruit contain glucarates, compounds which may help prevent breast cancer.
 
Pectin; a form of soluble fiber that forms a gel-like substance in the intestinal tract that can trap fats like cholesterol. In animal studies, grapefruit pectin inhibited the formation of atherosclerosis. Animals fed a high-cholesterol diet plus grapefruit pectin had 24% narrowing of their arteries, while animals fed only the high-cholesterol diet had 45% narrowing.
 
Prevent Kidney Stones; reduce your risk of calcium oxalate kidney stones. Drink grapefruit juice. A study published in the August 2003 issue of the British Journal of Nutrition found that when women drank ½ to 1 liter of grapefruit, apple or orange juice daily, their urinary pH value and citric acid excretion increased, significantly dropping their risk of forming calcium oxalate stones. (October 4, 2003)
 
Protection against Macular Degeneration; Data reported in a study published in the June 2004 issue of the Archives of Opthamology indicates that eating 3 or more servings of fruit per day may lower your risk of age-related macular degeneration (AMD), the primary cause of vision loss in older adults, by 36%, compared to persons who consume less than 1.5 servings of fruit daily.
 
In this study, which involved 77,562 women and 40,866 men, researchers evaluated the effect of study participants' consumption of fruits; vegetables; the antioxidant vitamins A, C, and E; and carotenoids on the development of early AMD or neovascular AMD, a more severe form of the illness associated with vision loss. Food intake information was collected periodically for up to 18 years for women and 12 years for men. Fruit intake was definitely protective against the severe form of this AMD vision-destroying disease. Three servings of fruit may sound like a lot to eat each day, but grapefruit can help you reach this goal. Try starting your day with a half grapefruit, add grapefruit sections to your green salads, or for an elegant dessert, spread a little honey over a half grapefruit and broil for 1-2 minutes. (July 10, 2004)
 
How to Select and Store Grapefruit!
 
A good grapefruit doesn't have to be perfect in color. Skin discoloration, scratches or scales may affect the appearance of a grapefruit, but they do not impact the taste quality. Signs of decay include an overly soft spot at the stem end of the fruit and areas that appear watersoaked. These form of decay usually does translate into poor taste; a flavor that is less vibrant and more bitter than a good quality grapefruit.
 
The grapefruit should be heavy for its size as this usually indicates thin skins and therefore a higher concentration of juicier flesh. Those that have overly rough or wrinkled skin usually tend to be thick skinned with less meat inside, a dryer taste and not as flavorful.
 
Grapefruits should be firm, yet slightly springy when gentle pressure is applied. While chilled grapefruits do not have an apparent fragrance, those kept at room temperature should have a subtly sweet aroma. Grapefruits can be purchased throughout the year although the height of the season ranges from winter through early spring.
 
Since grapefruits are more juicy when they're slightly warm rather than cool, store them at room temperature if you are planning on consuming them within a week of purchase. If you will not be using them within this time period, store them in the refrigerator crisper where they will keep fresh for two to three weeks.
 
The next time you eat a sweet, juicy grapefruit know that you will also be consuming a variety of nutrients you may not have realized. These nutrients are called phytochemicals. They are found naturally in grapefruit and many have been linked to the prevention of certain cancers. One of these phytochemicals is called lycopene. Some animal studies have shown lycopene to reduce the risk of prostate, breast, cervical and colon cancer. Studies by Dr. Steve Clinton at the Harvard School of Public Health have shown that when lycopene is found in high concentrations in the human prostate it significantly reduces the risk of prostate cancer.

I have no recipe here as we eat fresh grapefruit peeled in citrus fruit salad or as a breakfast fruit or snack. You can find canned grapefruit sections that are quite tasty. Use your imagination and enjoy grapefruit for your health!

The Season Of Sweet Deception!

The upcoming holidays are ripe for deception this year more than ever before! With everyone so freaked out about possibly getting the flu that they are taking care to not overindulge in the sweets department!
 
By now the message is out that eating sugary foods kills the immune system. Hence buying into the deception!
 
Everywhere I go I see these little old gals with bags of Splenda on their carts or tables set up to sell you on their wares and passing out free drink or food containing Splenda? All the while saying how healthy it is and how it will prevent you from gaining weight and/or prevent the immune system's downfall?
 
Someone is not telling them the truth! Or they are not trying to find the truth. There are tests showing how Splenda causes weight gain and more not so good things?
 
Those tests prove my premise and why scientists know that more horrific illnesses are just around the corner because of the Splenda craze?
 
To begin with there has been no human research done regarding Sucralose (Splenda)! So who knows what is going to happen to the human body?
 
So far we know what happens in animals! Tests have shown that sucralose (Splenda) can cause many problems in them, such as:
 
*Aborted pregnancy
*Atrophy of lymph follicles in the spleen and thymus
*Decreased red blood cell count
*Decreased fetal body weights and placental weights
*Diarrhea
*Enlarged liver and kidneys
*Extension of the pregnancy period
*Hyperplasia of the pelvis
*Increased cecal thickening
*Reduced growth
*Shrunken (up to 40%) thymus glands

 
If that's not enough reason to not use Splenda:
 
According to the Medical Letter on Drugs & Therapeutics, "Its long-term safety  is unknown."
 
According to the Sucralose Toxicity information Center "Manufacturer's hundreds of studies' were clearly inadequate and do not demonstrate safety in long-term use, some even shows dangers." You bet they haven't released those to the general public.
 
According to Consumers Research Magazine "Some concern was raised about sucralose being a chlorinated molecule. Some chlorinated molecules serve as the basis for pesticides such as D.D.T., and accumulate in body fat. However, Johnson & Johnson emphasized that sucralose passes through the body unabsorbed." NOT!!!
 
A substantial amount of sucralose must be absorbed for the accumulated DDT and other chemicals that is showing up in every single body that walks this earth! Do you want to add to that accumulation with Splenda? "Accumulates in the body fat?" Could that be why reports are surfacing showing weight gain with the use of Splenda, Aspartame, etc.?
 
 
The FDA says that sucralose is produced at an approximate purity of 98%.  So what is that other 2%?

NASA to Donate Data to Aid Plants, Animals

BANGKOK, Thailand (AP) - While NASA is best known for putting a man on the moon, the U.S. space agency will now help keep plant and animal species on Earth.

NASA agreed Friday to provide satellite data to boost nature conservation efforts by monitoring endangered plants and animals and their habitats, a space agency official said. It will also help environmental groups build a globally accessible database of maps and ecological data.

"This opportunity for NASA to help advance conservation efforts globally reinforces our vision to use our unique vantage from space to improve life here on Earth," said Ghassem Asrar, NASA's deputy associate administrator for science.

The announcement came during the World Conservation Union's meeting in Bangkok attended by more than 6,000 government officials, scientists, business representatives and environmentalists.
 
The deal will give member organizations of the World Conservation Union - an umbrella group known as IUCN - greater access to NASA's mapping technology, said Stuart Salter, the IUCN's Species Information Service manager.

"We want to begin to map out over time the relationship between different habitats and species," he said. "You can see land use changing, you can see species disappearing or moving. That's really fundamental stuff."

Salter said the maps will help scientists assess the impact of human development projects - from roads to towns - on species and their habitats.

The IUCN has warned that more than 15,500 animal and plant species face extinction, mainly because of exploitation and habitat destruction by humans.

The NASA project is expected "to help improve the quality and effectiveness of environmental decision-making, and ultimately to improve conservation," according to an IUCN statement.

The California-based software company Oracle is also planning to donate software for the project, Salter said.

"The potential for the beneficial use of this information in the area of the environment and conservation is enormous," said Achim Steiner, the IUCN's director general. "Yet until now, it has remained largely untapped, particularly in the developing world."

Scientists are presenting research on a variety of species and ecosystems, from tropical coral reefs to the Himalayan mountains, at the Bangkok talks, which end Nov. 25.
